Thanksgiving classic recipes

Easy Turkey Gravy




  • 1/4 cup all-purpose flour drippings from the turkey roasting pan

  • 13/4 cups Safeway Chicken Broth

  • 2 tablespoons dry white wine (optional)

  • salt and pepper

In a 10- to 12-inch frying pan over medium-high heat, stir flour until medium-brown in color, 6 to 7 minutes. (If making ahead, cool and store airtight up to 2 days.)

Skim off and discard most of fat from drippings in turkey roasting pan. Whisk toasted flour into drippings in pan until smooth. Slowly add broth and wine, whisking until smooth.

Set pan over high heat and stir, scraping drippings free from pan until gravy boils vigorously. Simmer and stir until smooth 5 minutes more. Add salt and pepper to taste.

Per serving: 234 cal., 61% (141 cal.) from fat; 2.2 g protein; 16 g fat (5 g sat.); 20 g carbo (0.2 g fiber); 294 mg sodium; 40 mg chol.

Cook's Country TV on the Cook's Illustrated website has a great Garlic Mashed Potatoes recipe. These are really good and I love the technique. 4 lbs of diced potatoes are simmered in 1-3/4 cups of half & half and water in a covered dutch oven on the stovetop. The end result is nothing to drain. All of the liquid is absorbed by the potatoes and you just mash them in the pot, adding 1/4 cup more of half & half and more butter. None of the flavor is washed away and no pouring off scalding water. I'm going to use this technique from now on for plain mashed potatoes. The recipe is on the Cook's Country TV part of the website. GARLIC MASHED POTATOES 

From the episode: Fail-Safe Thanksgiving 

Cutting the potatoes into 1/2-inch pieces ensures that maximum surface area is exposed to soak up garlicky flavor. 

Serves 8 to 10. 

INGREDIENTS 

4 pounds russet potatoes , peeled, quartered, and cut into 1/2-inch pieces 
12 tablespoons (1 1/2 sticks) unsalted butter , cut into pieces (I used a total of 1 stick of salted butter) 
12 garlic cloves , minced 
1 teaspoon sugar 
1 1/2 cups half-and-half (I used canned evaporated milk) 
1/2 cup water 
Salt and pepper 

INSTRUCTIONS 

1. Place cut potatoes in colander. Rinse under cold running water until water runs clear. Drain thoroughly. 

2. Melt 4 tablespoons butter in Dutch oven over medium heat. Cook garlic and sugar, stirring often, until sticky and straw colored, 3 to 4 minutes. Add rinsed potatoes, 1 1/4 cups half-and-half, water, and 1 teaspoon salt to pot and stir to combine. Bring to boil, then reduce heat to low and simmer, covered and stirring occasionally, until potatoes are tender and most of the liquid is absorbed, 25 to 30 minutes. 

3. Off heat, add remaining butter to pot and mash with potato masher until smooth. Using rubber spatula, fold in remaining half-and-half until liquid is absorbed and potatoes are creamy. Season with salt and pepper. Serve.

Those who forget the pasta are condemned to reheat it.

Thanks for sharing the mashed potatoes recipe and the link! I am sure the mashed potatoes will go well with the Easy Turkey Gravy. I like that the mashed potatoes use garlic, I am a big fan of garlic and butter. Haha. Did you check out any of the other recipes on the Safeway Thanksgiving site?
