Brocolli Rice & Cheese Casserole

Hello Betty Crocker Family,


My name is Shea and I'm new to this site!!  I want to make a Brocolli, rice, & cheese casserole for Thanksgiving.  I really need a recipe!!  Can anyone help me??

Hi Sheajones,


Cate suggested some great recipes! The Cheesy Vegetable Risotto is a good choice. You can replace the frozen vegetables mix with a 12 oz bag of frozen broccoli florets if you prefer to just have the broccoli.

Hey girl, I just made this recipe (I modify every recipe). It was DELICIOUS!!!


1/2 cup (1 stick) butter


1 large onion, chopped (about 1 cup) *I added chopped celery and mushroom also


1 package (16 ounces) frozen chopped broccoli


1/3 cup milk (used cream)


1 can (10 3/4 ounces) Condensed Cream of Chicken Soup  (celery, broccoli, or mushroom)


1 jar (8 ounces) pasteurized process cheese  sauce (like Cheez Whiz, I used Velveeta)


1 1/2 cups cooked regular long-grain white rice


Heat the butter in a 10-inch skillet over medium heat.  Add the onion and cook until tender-crisp, stirring occasionally.(I added basil and cillantro also)


Stir the broccoli in the skillet and cook until it's tender-crisp, stirring occasionally.  Stir in the milk, soup, cheese sauce and rice.  Cook and stir until the cheese is melted.  Pour the broccoli mixture into a 2-quart shallow baking dish.


Bake at 350°F. for 30 minutes or until the mixture is hot and bubbling. 


I also added sharp cheddar to the top before the oven with parlsey....YUMMM!! Also I used brown rice. You can use lower calorie things if you are into that. As you can see, I am not.

I use the above recipe and put in a crockpot -  Put everything in and cook on high for an hour and low for 2 - AWESOME!!!!

I will try this warriormom. Seems easier, and I am ALL about easier. This is why I have a Crock Pot. =)

Hello Cookingprincess.  Do you remember about how many that recipe fed?  I'm going to a potluck dinner and am thinking I might need to double the recipe.  Thanks in advance.
