Cake Mix Cookies

Here's a recipe for cookies made from a cake mix.  Does anyone have another cake mix cookie recipe you're willing to share?

Coconut Crisps

  • 1 pkg. Swiss Chocolate cake mix
  • 1/2 c. cooking oil
  • 1/4 c. water
  • 1 tsp. almond extract
  • 1 egg
  • 1-1/3 c. flaked coconut
  • Blanched whole almonds or quartered maraschino cherries, if desired

Preheat oven to 375 degrees F.

Blend cake mix, oil, water, almond extract and egg.  Stir in coconut.  Drop from a teaspoon onto an ungreased cookie sheet about 3 inches apart.  If desired, top each cookie with a blanched whole almond or a quarter of a maraschino cherry.

Bake for 10 to 12 minutes.

Cool on cookie sheet for about 1 minute, then remove to rack to finish cooling.

Yield5 dozen 2-1/2 inch cookies.

OK, I am sorry. I can't post another e-mail site. However, there is a link if you google it to a site that is packed with Betty Crocker cookie recipes with cake mix.

This is a very good recipe. I have used a butter pecan cake mix and added chooped pecans to it and it is great.

cream cheese cookies:

1/4 c butter or margarine , softened                      1 pkg. (8 oz ) cream cheese

1 egg                                                                 1/4 teas. vanilla

1 pkg ( oz) yellow or devil's food cake mix

Cream butter and cheese. Blend in egg and vanilla. Add cake mix (dry), 1/3 at a time, mixing well after each addition. (If

mixer is used, add last third by hand). Cover and chill 30 minutes. Heat oven to 375 degrees. Drop scant teaspoonsfuls

onto ungreased baking sheet. Bake 8-10 minutes or until lightly browned. Cool slightly before removing from baking sheet.

Makes 6-8 dozen cookies

Left Hug  Thank you, mobricklayer37 and carriebear, for your responses to my request for cake mix cookies.  The pecan cake mix cookies recipe with added pecans sounds as good as the cream cheese recipe.  I can't wait to get started!

carriebear, was this the site you tried to tell me about?  cooks dot com?  I just Googled cake mix cookies (duh, I never thought about doing that), and it was at the top of the list.  I've browsed through a few of the recipes and it appears to be what I'm looking for.

Thanks again, to both of you!  Yes

Cake Mix Cookies (makes about 48 cookies) 1 pudding-in-the-mix cake mix1 10-12 oz. pkg baking pieces2 Tblsp butter, softened1 egg, beaten¼ c. milk (If it’s absolutely too dry you can add another Tblsp, but no more) Preheat oven to 375 °. Spray cookie sheets with cooking spray. Combine all the ingredients in a large bowl and stir til it’s not dry any more. It’ll be stiff and very hard to stir. Drop by table-spoonfuls onto the cookie sheet. You can put them a little closer together than usual – they don’t spread a lot.  Put them in the oven and bake 8 minutes. Don’t overbake! They don’t need to brown. They’re done when the tops show some cracks. Remove from oven and cool them on the cookie sheet. If you try to move them too soon, they’ll fall all to pieces.

You can try any combination of mixes & morsels. You can also do add-ins: try chopped pistachios & Craisins in a yellow mix with white chocolate morsels. Any combination of chocolate & peanut butter morsels is great. I use a cherry chip cake mix & milk chocolate chips -- tastes like chocolate-covered cherries!  Try the butter pecan mix with white morsels, walnuts & candied fruit for a fruitcake flavor. I also like a chocolate mix with chopped Andes mints (rather than morsels).

Note: The cherry chip cake mix may be hard to find, but it can be found in stores that cater to international tastes, or at some small, country town stores.

I have a better source for you.  It is a book called " Cake Mix Magic " and it is put out by Publications International Ltd.  The book was published in 2001.  Here also is a web site that you might find interesting. www.fbnr.com.  for cake cookies and other bake goods.
