cheesecake

I am making a cheesecake and I have baked it exactly 1 hour 20 mins per the instructions but when I pull it out of the oven, the pie is still very loose, like it is not baked; is that normal

Oven temperatures vary so maybe you should have added another 10 minutes to the time. But, yes, the cheesecake should not be completely set in the middle.

The baking time on my 9" springform pan New York Style cheesecake bakes 1Hr 10min. Turn oven off and allow cake to remain in over for 2 hrs. It comes out perfect.

As mentioned, yes, the cake will not be completely set in the middle but will set up as it cools.  Oven temperature, humidity, altitude and other variables can effect the baking time and experience will tell you how much "jiggle" is too much.  I look for movement similar to a "soft set" pudding not a soupy movement.
