New Desserts from standard old cake mix?Any thoughts?

Hello, being new to this site, I also posted this question in the "entertaining" thread section but thought maybe this would be a better place to post my question...

I was wondering if anyone had any great recipies on different desserts you could make using box cake mix? Or what cool ingredients you could substitute for the "called for" wet ingredients to shake things up a bit? (for instance I made something called a Pumkin Gooey Cake from a recipie from Paula Deen once which called for box cake mix, and it was out of this world!)

I appreciate any replies. Thank you!

hi rustyspoons...

try this one.... bake a regular chocolate cake.... after it is cooles down.... crumble it up in a glassbowl... take a jar of cherries.. (black cherries for example )... use some of the cherry juice and mix it in the cakecrumbles until they are moist, but not too wet....then put the cherries on top...... mix together 2 packages of cream cheese, 1 package of jell-o vanilla pudding instant... (the one you don't need to coook) and then put in a package of cool whip.. stir it in gently so it stays fluffy... put it on top of the cherries... voila....you will have a great black forest desert....if you like decorate it with cocoa and cherries.... let me know how it came out....

I just made some super yummy Eggnog Cupcakes.  Here's the recipe I used:

1 package yellow cake mix

1 cup egg nog (I just used the pre-made stuff from the grocery store)

1/2 cup butter, softened

1/2 teaspoon nutmeg

Just mix everything together and bake according to the box instructions.  I topped them with cream cheese frosting with a little nutmeg/sugar sprinkle.

Is the egg nog in replace of anything ...... oil, egg etc? Or do you just follow the instructions and add the egg nog as an additional ingredient? Which brand of yellow mix did you use? Also, is the 1/2 C butter an added ingredient? I know some brands don't call for certain ingredients.

Thanks

This is going in my special recipe file for the Holidays. What a time saver when you want something that taste great but don't have the time to make it. I wonder how these would taste with a, flour, brown sugar, butter, crumble on top? It would still be fast but add a little fancy for the Holiday cupcakes platter.

Have you looked at any of the Cake Mix Doctor books?  I LOVE them and your local library might have them on hand.

I make a great (so everyone says) Coconut Cake that is so easy to make. Bake one Betty Crocker White cake mix according to directions on box in a 9" X 13" pan (or glass baking dish for a nicer presentation). When you take it out of the oven, let it cool for about 5 minutes. Punch holes in it with the end of a wooden spoon (the handle end). Pour a can of coconut cream all over the cake so it can soak in (you can find this either in the baking section of the store or where they sell mixed drink mixes like Pina Colada mix, etc.). Spread a large carton of Cool Whip over the top and sprinkle coconut all over it. For Christmas, I sometimes color the coconut by placing in two separate bowls and putting a couple drops of red food coloring in one and green food coloring in the other and mixing up with a spoon. Cover with plastic wrap and refrigerate immediately. Serve after about an hour in refrigerator (so coconut cream will have time to soak in). Refrigerate leftovers (if there are any, which I never have). Hope you enjoy this recipe!

My husband found a recipe that he loves and you can use any cake mix. He likes to use carrot or spice cake. So, all you do is one box of cake mix and 1 can of pumpkin. Mix together and bake according to directions. We have only baked as cupcakes because of the convenience. I know it sounds too easy but it is very good!

Also, for a crunch kind of cobbler that is a big hit- Spread 1 can of pie filling (try blueberry) in a 9x13, sprinkle with a butter recipe box cake mix, drizzle 3/4 cup melted butter over mix, and then sprinke some pecans on top. Bake at 350 for approx 30 min. YuM!! (dusting with powder sugar is a bonus)

We made this with our students in the life skills class and it turned out very well. We also made one with a cake mix and a can of diet soda. That's it, just two ingredients. Very moist and delicious!

There's a computer program for cookbooks and one of them is for using cake mixes. Betty Crocker cake mixes. You can find it at Best Buy. Look for cook'n software

This is actually quite an old recipe to use a yellow cake mix.  It makes a cross between a cake and a cobbler.

Dump Cake

Prep Time: 10 minutes Cook Time: 1 hour

Ingredients:

1 (20 ounces) can crushed pineapple, undrained

1 (21 ounces) can prepared more fruit cherry pie filling

1 (18.25 ounces) box yellow cake mix

2 sticks of butter or margarine, each cut into 12 slices

1/4 cup chopped nuts (your choice - optional)

Preparation:

Preheat oven to 350 degrees F (325 for glass baking dish). Have a 9 by 13-inch baking pan ready.

Dump undrained pineapple baking dish or pan and spread it out evenly.

Using a spoon, dump globs of cherry pie filling evenly on top of the pineapple.

Sprinkle the cake mix evenly over the cherry and pineapple layers.

Cut butter into slices with a butter knife and place slices evenly over cake mix.

Sprinkle nuts on top -- if you're using them.

Bake for one hour. Use heavy oven mitts to remove the dump cake from oven or let your older helper do it.

To serve, scoop cake out with a large spoon like a cobbler, and dump it on a nice plate. A scoop of vanilla ice cream is delicious with dump cake. Serve warm or cold.

Yield: about 10 to 12 servings

recently i was given a recipe using any flavor betty crocker cake mix . The only ingredient is a prepared box of cook style pudding, cooled. Add no oil, water or eggs. Only the pudding. I beat at low speed for one minute, then high speed for two minutes. Scooped into cupcake pans lined with paper liners, enough for 2 dozen. I then sprinkled the top with chopped walnuts and chocolate chips. ( I used the fudge cake mix and fudge pudding.) Baked at 350 for 25 minutes. Put on cooling racks. When cooled I opened a can of vanilla whipped frosting, added about 1 tablespoon of rasberry jam, (no seeds) to a half can of frosting, mixed well, put in a pastry tube, squeezed about 1 tbs. into the center to the inside of the cupcake, for filling, did half with rasberry and half with white frosting.

I was at a family reunion when I tasted these wonderful cupcakes, and the aunt who made them said it was a recipe she found on the box many years ago when she first started cooking, and she has been making them ever since, always a hit.

Today, I made these with a french vanilla cake mix and vanilla pudding, topped with chopped pecans, and will use apricot jam mixed into vanilla whipped frosting for the filling.

She says the combinations are endless, so I think I am going to try pumpkin and spice next time.

Good Luck

This sounds simple enough with endless flavors.

I'm wondering if using instant pudding vs the cooked would make a difference.

Any one experimented?

I can't wait to try this one. I love recipes where you can experiment.  I love lemon, so I am probalby going to try lemon cake mix with lemon pudding.  I'll bet  Pineapple cake mix with coconut pudding would be good too.

Yeah I use a white cake mix and add some cocoa and red food coloring when I wanna make a quick red velvet cake. Just add 1/3 cup of cocoa and a 2 oz bottle of red food coloring and add another 2 oz bottle to your vanilla frosting and there you go. Red Velvet Cake with Red Icing. My family lovesit.

Cake mixes are handy things to have tucked in your cupboard and having new ways to use them is always fun. Have you tried these faves of mine?

One of my favorite quick to fix muffins that only requires three ingredients..... is so simple and so good:

One large box Spice Cake Mix

Add 15 ounce can pumpkin

Add one cup chocolate chips

Mix all together...don't make up the cake mix, use it dry...Now bake at 350 for about twenty minutes.  That't it.

You can mess around with this and use any cake mix, use any puree,(applesauce, persimmon, squash)  any kind of chip....peanut butter, caramel, vanilla chips.  Have fun!
