I make a great (so everyone says) Coconut Cake that is so easy to make. Bake one Betty Crocker White cake mix according to directions on box in a 9" X 13" pan (or glass baking dish for a nicer presentation). When you take it out of the oven, let it cool for about 5 minutes. Punch holes in it with the end of a wooden spoon (the handle end). Pour a can of coconut cream all over the cake so it can soak in (you can find this either in the baking section of the store or where they sell mixed drink mixes like Pina Colada mix, etc.). Spread a large carton of Cool Whip over the top and sprinkle coconut all over it. For Christmas, I sometimes color the coconut by placing in two separate bowls and putting a couple drops of red food coloring in one and green food coloring in the other and mixing up with a spoon. Cover with plastic wrap and refrigerate immediately. Serve after about an hour in refrigerator (so coconut cream will have time to soak in). Refrigerate leftovers (if there are any, which I never have). Hope you enjoy this recipe!
