Looking for shortbread cookie recipes

I'm trying to find a good shortbread cookie recipe like the cookies that you put jam in the middle of.


Can anyone help me with this??? thanks a bunch.

Thumbprint Cookies
From Betty Crocker


1/4 cup packed brown sugar
1/4 cup shortening
1/4 cup butter or margarine, softened
1/2 teaspoon vanilla
1 egg, separated
1 cup Gold Medal® all-purpose flour
1/4 teaspoon salt
3/4 cup finely chopped nuts
Jelly


1. Heat oven to 350ºF.


2. Mix brown sugar, shortening, butter, vanilla and egg yolk in medium bowl. Stir in flour and salt until dough holds together.


3. Shape dough into 1-inch balls. Beat egg white slightly. Dip each ball into egg white. Roll in nuts. Place about 1 inch apart on ungreased cookie sheet. Press thumb deeply in center of each.


4. Bake about 10 minutes or until light brown. Immediately remove from cookie sheet to wire rack. Cool completely, about 30 minutes. Fill thumbprints with jelly.


 


Did You Know...These cookies were often called Thimble Cookies in older cookbooks because bakers used a thimble to make the indentation.



Simplify: You'll be done in a flash if you use a food processor to chop the nuts.

I found this in an old Betty Crocker cookie cookbook.  I love it.


Jam Shortbread cookies


1 cup shortening


1/2 cup granulated sugar


1/2 cup brown sugar


2 egg yokes


3 Tbsp milk


2 tsp vanilla


2 2/3 cups sifted all-purpose flour


2 tsp cream of tartar


1 tsp soda


1/2 tsp salt


1/2 cup jam or preserves


Thoroughly cream shortening and sugars:  add egg yolks, milk, and vanilla.  Beat well.  Sift together dry ingredients: add to creamed mixture.  Chill 1 hour.  On well-floured pastry cloth,roll half of the dough at a time to  1/8 inch.  Cut with 2 inch cookie cutter.  Cut small hole in center of half of cookies.  Place 1/2 tsp jam on each plain cookie.  Top with cutout cookie and press edges with inverted spoon.  Bake on ungreased cooky sheet at 350 degrees for 10 to 12 minutes.  Makes 3 1/2 dozen.
