I need a recipe for easy chicken enchilada's or fajita's

I have precooked Rotisserie chicken, flour tortilla, mex cheese, enchilada sauce, and refried beans. CAn somebody plese help me decide how to put them together for a quick tasty meal?

I set up a little station with chicken broth in a sauce pan, cheese, minced onions, shreded chicken, green chilis and corn tortillas. rolling as I go and  put in pan with enchilada suace topped with cheese. 


For seasoning I use Cayenne, onion salt, pepper or a bit of fajita or taco seasoning in the chicken. 


 


You can also layer like lasagna, but their harder to separate.

Saute some chopped onion in some olive oil in a skillet for a few minutes.  Add the chicken, can of cream of chicken soup, and a couple spoonfuls of sour cream and cook until hot.  Add some cheese 1/2 cup or so.  Spread mixture into tortillas (I get about 7-8 tortillas) and roll and lay in a greased 13x9 baking dish.  pour enchilada sauce over the top of enchiladas, spread another 1/2 cup of cheese over the top, more or less if desired and bake at 350 degrees for 20-30.

Chicken Enchiladas


First I cook ground chicken in a skillet. Then I lay out 6 tortillas (I use flour because I think it tastes better than corn but you can use either). I put refried beans, cooked ground chicken, cheese and about a spoon full of enchilada sauce on each tortilla. I use a 13x9 dish and I cover the bottom of it with enchilada sauce. Then I roll up the enchiladas and place them into the dish. Then I pour more enchilada sauce over them. Try to get the sauce inbetween each of them and between the tortillas and the dish, it will keep them from sticking together and to the dish. Cover with tin foil and bake at 350 for about 25 to 30 minutes, until sauce is bubbling. After it's done cooking I add tomatoes to the top or each person can add tomatos to their own enchiladas. Instead of regular cheese you can use cream cheese if you want also.

I know i'm a little late with my response by a couple of months but if you have the same ingredients later on (lol) i can help you put these ingredients together to make some yummy enchilladas.  try to shred the chicken or just pull it apart with your fingers into tiny pieces and mix it with the refried beans some of the cheese and just enough enchilada sauce to make the chicken and bean mixture not so sticky. put the mixture evenly into the shells leaving enough room to fold the ends.  then fold the ends and roll like burrito and place in a baking dish with the rolled side down.  Pour ramaining enchilada sauce over the enchiladas and sprinkle with cheese.  then bake at about 350 until cheese is melted or if you like until golden brown.  Even though my response is late maybe you can use it some other time. now i want to make enchiladas Big Smile
