Fresh Spinach Recipes

I'm an American living in a small town in Mexico.  I recently purchased a 1 pound bunch of spinach!  I was looking on the site for spinach recipes, but most call for frozen spinach.  We don't have frozen spinach here!!!  Could you please help me with some recipes that include spinach?  Maybe a lasagna or something like that!!!  Do I just chop it fresh and mix it in, or do I have to pre-cook the spincach?  My kids were the ones who asked for spinach, but I have no idea how to prepare it!!!

For fresh spinach,I wash and dry it thoughly. Then cut out any large stems (not necessary if you have baby spinach) and chop. I steam it in a little water in the microwave or on the stove to wilt it down. Or I saute it in oil (watch the splatters) with other veggies for omelets. One pound will wilt down very quickly, just keep mixing it in a pot. My family likes spinach risotto and Greek spinach pies called "spanakopita." Now you can use it in recipes that call for frozen, chopped spinach.Hope this info helps.

I put fresh spinach in lasagna without cooking it, it shrinks down to a fraction of the size, so you can add quite a bit. I also love to stir fry it with chicken, onions, peppers (add the spinach at the end, it only takes a minute to cook) and serve it over rice, pasta or whatever.

For every cup of cooked spinach, you'll need to buy about a pound of fresh.

I like to saute spinach in oil with mushrooms as a complement to beef.  Sometimes I add a little balsamic vinegar to sweeten the dish!
