New Ideas?

I am looking for new ideas and ways to get creative with leftover cooked ham. Truthfully, after: ham sandwiches for 2 weeks, ham and brocolli casserole, scalloped potatoes with ham, and assorted ham & whatever soups; I have finally come to a point that I really don't want to ever see another ham, but still have a few large chunks left to use. We don't waste anything in this household- otherwise I would throw it out.

I don't know if you know this but ham freezes very nicely. I usually cook a big ham, slice it, and freeze about half. That way we can take a little break from it. I also like to dice some to put in omlets and on salads. Ham salad is good ,too.

Well, how about lightly browning some onions (2-3 med.) in a frying pan, adding some mushrooms (6-7 lg.) as they start to get golden, then add the ham (1/4 to 1/2 cup shredded, or more if you like)  just to heat through and then just dump a jar of bertolli mushroom sauce or any style alfredo sauce into the pan. Serve on top of any type of cooked noodle, voila, another dinner that has a nice ham flavor, but tastes much nicer with the addition of those golden onions and mushrooms!

For breakfast, just add some shredded ham to some hashbrowns, add some chopped peppers and tomatoes, top with cheese, done!

My favorite is a navy bean stew slow cooked in a crock pot (follow directions to soak beans, then add) with carrots, potatoes, a little onion, finely chopped celery and a handfull of greens cut into very skinny strips. (Thicken with a bit of instant mashed potato at the end if needed.)

Stuff some shredded ham with some spinach and some shredded mozarella into a chicken breast cut open to make a pocket, set into a casserole dish with some celery cream soup (instant, like campbells, 1 can) with 1/4 cup water added, sprinkle with some cheese (your choice, I prefer some mozarella with parmesan and asiago), bake for 35-45 min. (or until chicken reaches (165 min.) 180 degrees on meat thermometer). Serve with wild rice or instant rice with peas.

Got lots more...but this has to suffice...lol

 Stuffing chicken breasts is not a new idea but maybe you can add some other ingredients like onion, spinach, or diffenrent cheeses and vegetables inside the chicken breast..........finely chopped or julienned.........

I know you've had ham and scalloped potatoes already, but last night I added a bag of frozen broccoli, shredded cheddar, onion and small carrots. Everyone in the house ate every last bite.

Also- try adding ham (small chunks) to scrambled eggs and top with a little shredded cheese. Just a simple twist on the usual.Idea

We had the same thing Sunday night.  Only, I used frozen peas instead of broccoli.  We did have leftovers, but there are only two of us at home.  We saved the leftovers and will serve them as a side later this week.  It was delicious!!!

How about making a western omelet? Cook chopped green bell peppers and yellow onions until tender, add the cooked ham, pour in raw scrambled eggs. Stir lightly to mix ingredients, then cook over medium heat until eggs are set. You can top it with grated or shredded cheese, if you like, and serve with home fries or hash browns and/or toast.

You could make some:

ham croquettes with a light gravy 

ham kabobs with pineapple and onions and peppers over rice  baste with pineapple juice

ham and cheese turnovers made with crescent roll dough

ham reuben sandwiches

ham salad stuffed in empty cream puff shells

Freezing ham is definitely an option as suggested by member, lisamcd61, to use in something at another time.  When that time comes you might like to consider a Quiche or adding it to a bean soup.  To the following recipe suggestion you could add asparagus, broccoli or spinach if desired.

 

QUICHE - HAM AND SWISS CHEESE

Yield:  6-8 servings  

5 eggs
1/2 tsp. salt
1/2 lb. Swiss cheese, cubed
1 c. milk
Dash nutmeg
1 (9 inch) pie crust (store bought refrigerated or frozen premade crusts work beautifully)
1/2 lb. ham, cubed

•  Line pie pan with crust.
•  Fill it with the ham and cheese, alternating layers. (This can be done ahead and refrigerated.) When ready to bake, mix together remaining ingredients and pour into crust.
•  Bake at 350 degrees F. for 45 minutes or until knife inserted into center of quiche comes out clean.

I have often used leftover ham for quiche as well.  When I use a bone-in ham my daughters automatically look forward to a BIG pot of Ham and Bean Soup along with some good old fasion biscuits or corn bread.Smile

Ham is great chopped up in Hashbrown Hamburger Helper. Use instead of hamburger.Taste great and easyBig Smile

This is good for leftover ham-

Ham and Noodle Bake

2 cups cooked ham-cubed

1/4 cup onion,chopped

1/8 teasp. thyme leaves, crushed

2 tablesp. margarine

1 can cream of chicken soup

3/4 cup water

2cups cooked noodles

1 cup canned green beans, drained

1/2 cup shredded cheddar cheese

    In a saucepan, brown ham, cook onion with thyme in margarine until tender.  stir in remaining ingredients, except cheese.  Pour into 2 qt.  casserole dish, Bake @ 350 for 30 min. top with cheese, bake until cheese melts-8min or longer.  Enjoy!

I have a great ham casserole recipe -

16 oz macaroni noodles, cooked and drained

1 large can Cream of Chicken Soup

2 cups of ham, chopped

1 jar mushrooms

2 cups water or milk

Salt and pepper to taste

Mix all together and bake in casserole dish for 30 minutes or until bubbly at 350 degrees.  Good with a salad and some french bread.

I like to finely dice ham and some apple (with peel) and when making waffles/pancakes toss them on top - cook as usual.  Best if you add just a tablespoon or so of syrup in the batter!  Make lots and freeze for meals during the week!

 Last night, I used leftover ham in a macaroni and cheese casserole.  I just cooked the boxed macaroni until it was al dente. While it was cooking, I chopped the ham into small cubes, minced some onion really fine and put it into a mixing bowl with a can of cream of mushroom soup and the cheese packet.  Then I added the macaroni and mixed it all together well.  Poured into a casserole dish, crumbled buttery crackers on the top, and baked at 350 for 30 minutes.  I served it with glazed carrots.

 Some other ideas:

Use the leftover ham and the bone to make vegetable soup!  Just put the ham bone into water and simmer until the meat is falling off, remove the bone and add your other ingredients.  Use leftover veggies (I put them into a gallon bag after each meal and save up for making soup), add some tomatoes, chopped cabbage, etc. and you have a warming soup for a cold winter day.


Hawaiian Pizza is another great alternative!  Ham, pineapple, mozzarella cheese, and bbq sauce is what I use to make this for my family.

AuntTaz...a little trick my AuntCarrie taught me when I was just a wee youngin'.  Take about a pound of leftover, cubed smoked ham and add it to your Navy Beans in the Crock Pot.  Whip up a batch of corn bread.  UmmmUnnhh.  Hot buttery corn bread with Navy Beans and big ol' Ham chunks.  Stick's to your ribs.

I have some "unique" recipes that go over very well after we have ham.

One is to get a mini muffin pan and make little ham/quiche poppers. Very good as part of finger food meal or as an appetizer or snack. The other is a cheesy ham an potato bake. Uses velveeta and motzarella cheeses and topped with corn flake crumbles and melted butter. We never have any leftovers with either of these. if anyone wants the recipe drop me a line I am on yahoo under curly_que2.... just be sure to put recipe request or something in subject line so u dont go to the junk folder.

another use if its sliced thin and in bigger pieces is to spread cream cheese on it and wrap around a dill pickle (whole or quarters)....secure with tooth picks and cut into slices between toothpicks....big party favorite.

We really like to cube the ham and make ham fried rice.  You could actually make fried rice with almost any kind of leftover, cubed meat.  Delicious!
