Easy Weeknight Dinners

Mince Pie

This is nothing new.. just a good way to use leftovers which for us would be the ground beef, mashed potatoes, peas, and corn cut off the cob.

1lb ground beef
4 cups mashed potatoes
1/2 cup peas
1/2 cup green beans
1/2 cup corn
2 cans (10.75oz) cream of potato

- Brown the beef and preheat the oven to 375 degrees
- Combine the peas, green beans, corn, and cream of potato in a mixing bowl
- In a greased 13x9 baking dish, smooth out the vegetable mixture followed by the beef.
- Cover with the mashed potatoes and bake for about 20 minutes or until it is heated through and the mashed potatoes begin to brown.

I like mine with some ketchup.

Thanks for the recipe!  Sounds like a great way to use leftovers.

This is simular to what we call "shepherds pie" in my family.  We use onion and garlic in the meat mixture and put it on the bottom, use just corn and beans but no peas.  Very good (and tasty!) way to use leftovers!

Being a Brit Shepherds pie is one of my favourites.. a couple of spoons of worcestershire sauce (to taste) is the best addition to shepherds pie I know - my favourite comfort food :)

When eating leftovers the other night I thought back to your reply and tried some worcestershire.. definitely worth it. Nice job, my friend.
