lunch

I am looking for ideas for lunch to take to work. Something easy, can be made the night before, cold or hot. I am getting tired of the sandwich routine.

Our new favorite is Greek Yogurt with fresh blueberries or any fruit that is in season. Cantelope works well too. I still love eating celery ,carrots and cut up cucumber as a snack. We pack an apple for the afternoon snack, this time of year they are amazing and truly delicious. Enjoy with some string cheese.


We love lettuce wraps filled with leftover chicken or any cut up meat  from dinner. You can add some "sauce" that you can pack on the side like low calorie dressing or some kind of Asian sauce that you enjoy. Sprinkle the meat with shredded carrot that you can buy at the store ready to go or shredded veggies that you can find already shredded. This lettuce wrap is featured at many Asian restaurants like P.F. Chang.

Hi. I don't know how you feel about meatless lunches, but my fav is 2 cups of cooked beans (or 1 can of drained & rinsed beans) - Norhtern or Navy Beans work great w/ this. No need to cook if from a can, just drain & rinse, add some mustard (like yellow or spicy, whichever kind you like) Oregano, Parsley, Thyme, mix it up put in fridge for at least 2 hours (I make it up the night before) - pack for lunch w/ a cup of raw spinach. At lunch time, just put on top of the spinach leaves & eat. A variation of this is to add a can of drained tuna and maybe even a little dill.

Instead of can beans, why don't you try Green Giant steamed vegetables. All you do is heat them in the microwave for 3 minutes. Place them in a bowl and you have a wonderful meatless lunch.

Hi! One thing you could do is purchase a thermos. They are cheap and easily attainable at grocery stores.  You could pop some leftovers from the previous night in the microwave and put them in the thermos.  Tuna also works great. Add a 1/2 tsp. of curry powder 2 tbsp. of raisins and 2 1/2  tbsp. of diced apples to a can of tuna and put it in the fridge. The next day you could also put it on some toasted bread for a sandwich, but don't do this the night before as it will get soggy.

Hi, my suggestion is  Broccoli and salmon frittata, a really fantastic midweek dish.. it is best for lunch..
