What is your Favorite Week Night Soup?

I love to make soups because there are usually left overs for lunches. Sometimes on the weekend I will double a recipe and stock up extra in the freezer. Though- lately- I've been wanting to make soup on a weekday night.

Sometimes the hubby and I will make a super quick tortilla soup. Which is:

(1)    Cooked shredded chicken (sometimes I boil it if I don’t want to turn on the grill). Or if you are looking for something even quicker (and vegetarian friendly) add a drained canned of bean (I like pinto, northern, or black beans). 
(2)    Brown or White Rice (about ½ cups worth or so)
(3)    Broth (chicken or vegetable work just fine)  (I like to make lots- so I’ll put in about 32 oz.

Throw broth in saucepan. Once it boils- add chicken (or beans) and rice and continue to cook on high.

While this is cooking, chop of up some tomatoes, cilantro, avocado, and fresh lime. (though on occasion, I’ll use lime juice out of the bottle).  When rice is cooked- pour  broth mix into bowls and decorate with toppings. It’s extra fun when you have tortilla chips to eat it with.

This is another quick version! :)

So last night the hubby and I madethe Black Bean and Salsa Noodle Soup. I took a photo and posted it here!  Wow was it good! And really- done within 20 minutes! The hubby went back for seconds and took leftovers to work today (you know it's a winner when...)

Anyways- I wanted to ask you- What are you making for quick soups?

The chili recipe below is a really great chili.  It is quick and easy too.  The heat of it depends on if you use a mild spicy bean or a spicy spicy bean. Also I don't drain the chilies.  You can also double it and cook it in a dutch oven or large saucepan.



Santa Fe Skillet Chili


 


Nonstick cooking spray


1 to 1 ¼ lb (93% lean) ground turkey


1 cup chopped onion


1 tsp bottled minced garlic


1 tbsp chili powder


1 tbsp ground cumin


¼ to ½ tsp ground red pepper


15 ½ oz can chili beans in spicy sauce, undrained


14 ½ oz can Mexican or chili style stewed or diced tomatoes, undrained


4 oz can chopped green chilies, undrained


 



  1. Spray large deep skillet with nonstick cooking spray. Cook turkey, onion, and garlic over medium high heat, breaking meat apart with wooden spoon.

  2. Sprinkle chili powder, cumin and red pepper evenly over turkey mixture; cook and stir 3 mins or until turkey is no longer pink.

  3. Stir in beans, tomatoes with juice and chilies with liquid. Reduce heat to medium; cover and simmer 10 mins, stirring occasionally. Ladle chili into bowls.


 


Makes 4 servings
