Hi MomOfAllBoys:

Welcome to the boards!

I saw that you used the tag, "Mexican", so I thought I'd share some of two of my favorites.

Also, here are some great recipes that the family will love:

Also, I've been eyeing these grilled packet recipes because I think they would be fun for the family:

Here's one of my absolute fav's:

Bacon Cheeseburger Rollup

1lb ground beef

4 strips of bacon, cut into bits (scissors work best!)

2 cups shredded mild cheddar cheese (or use your fav)

1 refrigerated pizza crust (13.8 oz - thin works best)

-Preheat your oven to 400 degrees

-Roll the pizza crust out onto a greased cookie sheet

-Brown your beef and drain.

-Cook the bacon, drain.

-Add the beef back to the pan with the bacon and season how you would like (I use onion powder, seasoned salt, and pepper)

-Spoon the mixture onto the pizza crust and then sprinkle the cheese evenly

-Roll up the crust and place, seam-side down, into the oven and bake for 20-25 minutes (I never go past 21)

We always have scalloped potatoes with our Rollup.. oh, and ketchup!

Kitchen gadgets make the world turn.. and my kitchen could turn it for at least a year.

my new fav thing is mexican chicken salad!

  • take a rotiesry chicken and shred it up

  • add as much mexican mayo as you like in your salad( its the one with the lime in the regular mayo section)

  • cut up regular boiled potatos and carrots into small bite size pieces

  • cut up some jalopenos from a can-cut them very small and pour some of the juice in, maybe 2 tbsp( the jalopenos in the can come in the mexican section they are halfe and come with carrots and you can also add in the carrots if you like it extra hot)

  • mix everything together and put serve chilled, you can eat it with tortilla chips which is my fav or you can put it in a corn tortilla and fry it like your making a taquito or serve it on a crossont!

Dont wait around for the what if, do it.
