Burrito Shells

 Hello.  I have left over tortilla shells and i don't want them to go to waste.  We have already used ground meat and cheese, tomatoes, lettuce and sour cream countless times in the past.  Is there anything different i can do with these shells?

What about a fruit pizza? You could spread some cream cheese on the shells and cut up your favorite fruit. Or, you could make a Breakfast Quesadilla by using eggs, cheese, and your favorite breakfast meat. There is also a recipe on the website for BLT Burritos...a twist on the traditional BLT sandwich.

 My kids love it when I fill them with shredded chicken and rice, seasoned to taste, and lightly grilled.  Great side to soup on a cold evening.

I also like to cut them up into triangles (fold in half and cut with scissors into thirds) and then spray them with cooking spray and season with spices (like a mix of salt, cumin and chili pepper) and bake them in the oven at 375 degrees until crisp (about 5 or 6 minutes). The are a great lowfat alternative to chips. This also works for pita bread.

Here's a simple breakfast, snack, or dessert using any size flour tortilla

Preheat an oven to 350.

Spritz one side of a tortilla with water (or very LIGHTLY butter) and sprinkle with cinnamon and sugar.  Place on baking pan (pizza pan works great).  Spread chunky applesauce on top.  Sprinkle with grated monterey jack cheese.  Place a second torilla on top spritz with water (or very LIGHTLY butter) and sprinkle with cinnamon and sugar.  Bake until cheese melts.  Cut into wedges with pizza wheel.  Serve with vanilla yogurt.

I have a couple ideas that we use at our house. One is for breakfast. We make burritos! Scramble up some eggs, add some of your favorite breakfast meat like sausage or ham, shredded cheese, and we like to add hash browns with some peppers and onions.  We love them.

 I also have a great lunch idea.  I take some canned chicken, a little bit of some mild chilies and cheese to half a tortilla and fold.....then microwave for 1 min and voila....a great chicken Qesudilla

Recently I tired something new. I took taco sized tortilla shells and put alittle bit of mayo all over one side. Then I put in some lettuce and shredded cheese and finally a cooked chicken strip and then rolled it up. It taste like the snack wraps at McDonald's. There really good and you could put in anything you like on a chicken sandwich.
