Cooking for 1

I am Robin and I am new to the site as of today.  I am newly widowed and am having a very hard time cooking for one(I have always cooked for either 2 or more).


I would love any ideas people have on cooking for one.  I do have a problem in that I always seem to wait until the very last minute to take anything out of the freezer before work.  I am really lost in this cooking for one and would love to hear from other people who my be in this same situation.  Thanks.

Sorry about your loss. I am also new to this site.  I have a suggestion for you.  You could for instance when you go grocery shopping, immediately seperate your meats.  I.e: 1 breast per ziploc bag, or a palm of hamburger meat per bag ect.  this way you can make mimi meatloaves, and griiled chicken breast and nuke a potato with poked hols in it.  Another good idea is to bake, broil a couple chicken breast at a time.  1 night you can have it baked with a veg, and starch. You can put the other in the fridge and when you come home from work the next day slice and put atop a salad.  Just a couple tips.  I hope this helps! :)

    I also am new, and am also recently widowed. WE have alot in common. I live in the Atlanta area, and am a personal chef, catering to individual families. Yes, cooking for 1 is quite a challenge! I went from cooking for 6 to cooking for one. My daughter and her 2 children also moved out, so I have a really empty nest!  I find it easiest to cook for 2 or 4, and freeze in individual portions. Most don't need to be defrosted, and can be heated in the oven or Microwaved on defrost, then 50% power. What are your favorites, and maybe I can help with some recipes for you.

I will eay almost anything.  My only real turnoff in food is beans.  I did make mini meatloafs and mac and cheese (homemade) tonight and am freezing most of it for future meals.  also making chile tomorrow to freeze also.  But would like other ideas also thanks.
