Easy Weeknight dinners

Hi, my name is Star. I am a single divorced working mother with a daughter in college but she still lives with me. I am


also going to school. I would love to hear from anyone with some great easy weeknight meals on a tight budget.

an easy chicken dinner (no title really)


6 pieces boneless skinless chicken breast


1 can cream of mushroom (or chicken) soup


1 can water (use soup can)


1 box shake n bake


Preheat oven to 400. Empty can of soup in 9 x 13 baking dish, add water and mix completly (for thicker consistency add extra can of soup but stay with the one can of water). Take chicken and coat with the shake n bake and lay chicken in the baking dish (do not flip chicken). Bake for about 20 - 25 minutes or until chicken is completley cooked through. Can use mushroom sauce to pour over chicken or over noodles.


 


My kids loved the chicken and it goes real good with a salad.

My new favorite that makes a quick easy dinner (one you can have cooking while studying) is Chicken Cor Don Bleu Meatballs...


1 pound of ground chicken, mixed with a table spoon poultry seasoning, 1 large egg and about 1/3 cup of diced ham (the smaller the better).  I mix it all together like regular meatballs and divide it into 8 sections. 


I form each meatball around a FROZEN cube of cheese (swiss works,  fontina is my favorite) and then I roll the formed meatballs in seasoned bread crumbs.


Put all 8 meatballs on a greased cookie sheet and bake in a 375 degree oven for 35-40 minutes... serve with whatever dipping sauce you like (they don't need em)  We eat these with oven baked french fries, mashed potatoes, mixed veggies, they are really versitile and filling, 2 fills me up 3 to 4 fills my hubby.

Hi!  I have a few suggestions for ground beef. 


Tacos -- I use 1/2 lb of hamburger meat, 1 pkg taco seasoning, 1 can pinto beans, 1 can corn, 1/2 bell pepper (chopped) and 1/2 onion (chopped).  Brown the meat, onion and bell peppers together.  Stir in taco seasoning as directed on package.  Add corn and beans.  We fill up our tortillas with this mix and add tomatoes, lettuce, cheese and salsa.  Adding the vegetables and beans to the mix still fills us up while cutting down on our meat costs.


Another thing I make -- same meat mixture as above (you could double the recipe when you make it, and use half for this recipe), stir in 1 C salsa and 1 C shredded cheese.  Pour into a baking dish.  Mix up a package of corn bread and pour over the top.  Bake (350 F) until knife inserted in center comes out clean.


I make sloppy joes with 1/2 lb hamburger meat, 1/2 bell pepper (chopped), 1/2 onion (chopped),  1 zucchini (diced), and 1 jar salsa.  Brown the meat.  Add the vegetables and salsa.  Simmer until veggies are tender.  Serve on hamburger buns with cheese.  We eat corn on the cob and baked beans on the side. 


Bisquick has a recipe for Impossibly Easy Cheeseburger pie that's all right, too.  Also you could double that meat mixture, and use half of it to make BBQ beef cups (basically pressing biscuit dough into a muffin pan and filling with BBQ meat mixture).  I can get those recipes to you if you're interested.


I have some chicken recipes that I'll have to add later, as I have to leave soon to get my littlie to the doctor.   Hope these helped some!  Happy cooking!!
