Mongolian Beef Stir Fry

3/4 lb steak

3 tbsp cornstarch, divided

4 tbsp Teriyaki sauce, divided

1 tbsp dry sherry

1 clove garlic, minced

1 tsp white vinegar

1/4 to 1/2 tsp crushed red pepper

2 tbsp vegetable oil, divided

1 onion, chunked and separated

1 green pepper, chunked

Cut beef into 1 1/2 inch squares,. Mix 2 Tbsp cornstarch, 1 tbsp Teriyaki sauce, sherry and garlic. Stir in beef.Let stand 30 minutes. Combine remaining cornstarch, Teriyaki sauce, vinegar, red pepper and one cup of water; set aside. Heat 1 Tbsp oil in wok or large skillet over high heat. Add beef and stir fry for one minute; remove. Heat the remaining oil in the same wok. Add vegetables; stir-fry for four minutes. Add beef and teriyaki sauce mixture; cook and stir until sauce boils and thickens. Makes 3 to 4 servings.

I usually make mine into spaghetti. I cut up the roast saute it in olive oil, then saute minced onion and garlic,add tomato paste and seasonings. let simmer until sauce thickens. also I have cut it up and made BBQ sandwiches. put it in a pan with BBQ sauce add some water simmer to let the beef get the flavor. serve on hamberger buns, or open face on french bread.

I like to buy a large roast so that I do have leftovers to make beef buns (Baron of Beef Sandwiches).    Just thinly slice the left over beef, load up some nice fresh sub buns, make up a package of Au Jus  or OXO's French Dip for dipping.   Served with a salad this makes a great meal..... quick, too.

I chop mine up and use the broth it was cooked in as a soup starter.  Add cooked elbow macoroni, can tomato sauce, onion, and vegetable of your choice.  Sometimes I use rice in place of macoroni or canned canellini beans or whatever canned beans I have on hand.

I say keep it and the juices, you cook it in the same pot the day after and chop the meat up to smaller pieces re-heat to make a nice soup add more oxo to it and fresh veggies and some noodles of your choice - You can even freeze it for those colder months but be carefull how long you have it sitting around!

Once the meat is cooked you can re-freeze it in smaller portions for the quick late night snack.
