Seafood Crepes

I wanted to share a dinner I made. My husband and I are watching our weight, and try to get a lot of fish in our diet. Husband doesn't like vegetables much, and I try to be creative on getting veggies in. I've about sick of every possible way to prepare fish, though. I'm not a great cook, but I like to experiment.


This is my recipe for seafood crepes, that were a huge hit!


1. Make 8 crepes using a basic crepe recipe and set aside.


2. Cook Green Giant Simply Steam Seasoned Baby Vegetable Medley in microwave using package instructions


3. Melt 4 Tablespoons of Smart Balance Buttery Spread on the skillet


4. Add 1 T of chopped garlic and heat to bubbling


5. Add 2 T of Flour and mix until consistent.


6. add 1/2 cup fat free half and half and mix well.


7. Add more flour or half and half until you get the consistency the way you like it.


8. Mix in the baby vegatables


9. Add a fillet of Orange Roughy chopped into 1 inch cubes


10, Add 1/2 cup of Imitation Crab Meat


11. Heat until bubbling, then simmer on low 20 minutes


12. Put fish vegetable mixture into the crepes and serve warm


This is the first time I've shared a recipe that I made up. I hope I did it right. Cooking with the Green Giant seasoned and simply steamed vegatebles has turned me into a good cook! I've had such good luck coming up with creative and different meals that actually taste good.
