Easy Weeknight Dinners

He loves anything with Hamburger meat!!

So I am stuck in a rut... I cook dinner at least four nights a week and I can only come up with so many dinner ideas. My honey always eats what I cook, but I need more variety. He is truly a "meat and potato" kind of guy. And my other issue is time! I usually only have about 30 minutes to get dinner cooked. Does any one have any ideas, besides the old hamburger helper, spaghetti, and tacos?

I would greatly appreciate any help you have to offer!

I definitely know how you feel! My husband sounds very similar--meat & potatoes, not the most adventurous eater, won't eat seafood, etc. Does your husband like chicken? One thing that we do a lot of is grilling--especially when summer rolls around. I'll buy those boneless, skinless chicken breasts for my husband to grill (gotta love "manly" cooking), and on the side I'll have salad (I use that term loosely--usually just iceberg or romaine lettuce with peppers, one of the few veggies my husband eats, and dressing) and one of those boxed flavored rices. I'll have him make extra chicken, and then I'll use the leftovers in chicken enchiladas the next day. The enchiladas are far easier than one would think. Mix the chicken with about 4 oz of cream cheese, a can of diced green chilis, and a splash of milk. Stir till creamy. Put 2 tablespoons or so along the edge of flour tortillas, roll the tortillas, and put them in a 9x13 baking dish. Pour a can or two of enchilada sauce over the top, sprinkle some mexican blend cheese, and bake at 350 for about 30 minutes.

Another handy idea is lasagna--make the sauce the same as with spaghetti, and then layer it with cheeses and no-boil lasagna noodles in a baking dish. Since it's just me and my husband, I usually use a square baking pan; it's enough food for the two of us, and it takes less time to bake.

Sometimes instead of tacos we'll do nachos. Make the meat exactly like you would for tacos. Spread tortilla chips on a baking stone, top with meat, green chilis, and cheese, and bake at about 350 for 10 minutes or so. Serve with salsa and sour cream.

 Is he into Chinese? I'm still working on more Asian-style foods with my non-foodie hubby, but you can always buy those pre-cut veggie mixes and stir-fry them up with slices of beef or chicken. Serve over rice and voila!

Oh wow.....it seems we are in the same situation. Your hubby sound a lot like mine! I love the idea of enchiladas with the left over chicken. I'm wondering if the wetness of the mixture makes the enchiladas soggy?? Just wondering because he doesn't like anything that will soak through the bread if it happens to be on some. Sounds really good, though. I stay away from mexican food because of the heat. But if I omit the green chilis I may have something here. LOL thanks for the help!

The way to a man's heart, is through his stomach. I truly believe this...you would too, if you knew my husband. LOL

This is always good - especially since it makes enough to freeze in to several meals for the two of us - cook once - eat thrice!!



Layered Casserole

The taste will remind you of beef stroganoff with the added flavor of tomato sauce. Must be made a day ahead of serving, or may be frozen. Use your choice of pasta shapes!

Ingredients
8 ounces fresh pasta
1 (8 ounce) container sour cream
1 (8 ounce) package cream cheese, softened
1/2 cup shredded Cheddar cheese
6 green onions, thinly sliced
1 1/2 pounds browned and drained ground beef
2 (8 ounce) cans tomato sauce
1 tablespoon white sugar
2 tablespoons shredded Cheddar cheese

Directions
1 In a large pot of boiling salted water cook pasta until al dente. Drain well.
2 In a greased 13x9 inch casserole dish layer the cooked and drained pasta noodles on the bottom.
3 In a medium size bowl combine the sour cream, cream cheese, shredded Cheddar cheese, and chopped green onions. Spread mixture over cooked pasta in baking dish.
4 In a small bowl combine the sugar, tomato sauce, and cooked ground beef. Layer this on top of the sour cream mixture in the baking dish. Sprinkle with additional shredded Cheddar cheese, if desired.
5 Refrigerate casserole overnight. Remove from refrigerator one hour before baking.
6 Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes. Allow to stand 10 to 15 minutes before serving.
7 If freezing casserole, allow to come to room temperature for one hour before baking.
Makes 8 to 10 servings

Oh! I also forgot about the "breakfast for dinner" option. Omelets, pancakes, breakfast burritos, hash browns...always a good time.

I know what you mean about salad. Mine will eat lettuce, onion and cheese... and yes that is the salad. NO dressing!

He does like chinese very much so! If you can think of any "chines-easy" ideas let me know.

I really appreciate all the thoughts and ideas! and I think I will try the enchiladas! They sound yummy!!

Here is a "chine-easy" meal idea. This is a hit with my meat and potato man and I.


Sweet and Sour Chicken


White/ brown rice


2 boneless skinless chicken breasts


1 can sweat and sour sauce


1/2 green peper cut up


1/2 small onion


(and amount of veggies you want in there works too!)


 


In a large frying pan cook chicken and cut into small chunks,


add pepper, onion, and any other veggie till cooked. You can add a little oil to the pan.


Once all that is cooked just pour sweet and sour sauce over till sauce is heated.


After thats all heated scoop over rice.


ENJOY!


 


* With this recipie you can make with any type of meat you want and change the sauces and what not. Just add your favorite ingredients. Doesn't take long at all to make. Get instant rice for faster rice. If you don't want to cook up the chicken breasts just get two can's of canned chicken this works great as well, and makes this recipie even faster!

Why not try hamburger steak with carmelized onions and mashed potatoes. I also do swedish meatballs and you could eat that on a sub. There is always meatloaf, too.

one thing I use to cook and eat all of the time that was quick and easy was, beef stoganoph.  I would take and cook egg noodles.  while that was cooking I would cook a pound of hamburg with onions, drain and add a can of cream of mushroom soup (or you can use cream of celery ir cream of chicken if you don't like mushrooms).  Drain the egg noodles, and add the meat mixture.  mix well and viola, easy, cheap beef stroganoph.

Hey folks...Here is a tip thats worth something to all who eat hamburg. I always boil hamburg. Hamburg has alot of blood with antibiotics in it. Boiling removes antibiotics when you drain and rinse the hamburg. Use salted water when boiling. This is a fact folks...Just stating facts. I do however make meatballs, once in a while..

I've been buying freah beef from a local farmer that dosen't give the beef all those things and WOW dose the meat ever taste different! Due to finances, we can't do that right now and it's all I can do to eat store bought ground beefTongue Tied, i'll try that, Thanks   Granna2

Why don't you try a toastada they are quick easy and fun. Get some small tortilla shells Fry them in vegtable oil until golden brown. Fry up as much hamburger as needed. Get lettace,tomatoes,black olives just whatever you like on them. also you will need a can of refried beans. Once it is all cooked up just pile it on the tortilla shell and enjoy!!!!!!Wink    I hope you like this one

1 lb hamburger - I usually put in mushrooms oninons and green peppers and season it with soy sauce, steak sauce or whorechestershire sauce


1 can cream of mushroom soup


2/3 cup milk


1 1/2 cup shredded cheese (any flavor)


1 bag of tater tots


Brown and drain the hamburger.  Then spread in a baking dish (the size depends on how thick you want the casserole)  mix the soup and milk and pour it over the hamburger.  Sprinkle half of the cheese.  Top with tater tots until covered, and sprinkle the rest of the cheese.  Bake accorsing to the tater tots. 


I hope you try this one, and I hope your husband likes it!

We have a big family so I serve a lot of hamburger.  This is a quick and very tasty recipe I throw together.  Cheap too!  You can adjust the measurements for your family, but I buy and cook in bulk.


3 lb. groud beef


2 pkg. frozen onions/ peppers/ broccolli  (or some similar combination)


1 can Progresso Creamy Mushroom Soup


2 pkg. egg noodles


1 jar beef gravy


1 cup sour cream


2 tbs. butter


Brown ground beef in skillet.  (I use a premixed seasoning called w/ salt, pepper, garlic and onion powders) Drain.  Add frozen onions/ pepper/ broccolli saute until softened.  Meanwhile, boil egg noodles following package directions.  Add soup, gravy and sour cream stirring until well blended and hot.  Toss drained egg noodles with butter.


Serve beef mix over noodles.  Yummy, yummy, yummy.  Even my picky 7yo eats it!

My hubby is the same way.  He & the kids like this meal:


1 pkg of the refridgerated biscuits or crasants (sp?) - pat into the bottom of a 9X9 pan.  Bake @ 350 until lightly browned.


In a large skillet - 1-2 lb hamburger cooked/drained - add 1 can of cream of mushroom soup and 1/2 can of milk.  Frozen vegetables optional.  Mix together and pour over the biscuits.  Sprinkle top with Cheddar cheese.


Bake until cheese melted and is heated through.


You can double this and put in a larger pan for a larger family.  I make without vegetables and serve them on the side because the hubby does not like them:)


I have also used a box of stuffing - prepare like normal - instead of the buscuits.  This is also a hit and cheap.

Another easy one my family likes is Hamburger and Rice.  Seems odd but is really good.


1-1/2 lb hamburger browned and drained (I cook with a little onion)


1 can tomato soup


1 can water


2 cups uncooked minute rice - white or brown


salt & pepper to taste (I use Ms Dash)


Cook meat & onion in a large skillet.  After drain meat add the remaining ingredients and cook covered on low, stirring occationally, until rice is tender.  May add a little more water if needed for the rice.


Work with it a little - add more or less rice depending on how your family likes it.  Leftovers are good.

Bisquick has Impossible Cheeseburger Pie on the back of the box.  Delicious, but a little dry if overcooked.


Sloppy Joes are always great...I use Campbell's Tomato soup instead of ketchup or BBQ sauce.


Meat and Mac


1 lb groond beef


1 10 3/4 oz can Tomato soup


1/4 brown sugar


2 tbs vinegar


3-4 cups cooked pasta ( macaroni, rotini, shells your choice)


2 ribs celery


 


Brown ground beef and drain fat.  Cook noodles and drain.  Mix all ingredients together in a large skillet.  Cook until wamred through.


Pampered Chef has a BBQ Beef Bundles recipe - Scrumptious!


Beef Stroganoff


1 lb Ground beef


1 10 3/4 oz can Beef broth


1 10 3/4 oz can Cream of Mushroom soup


1 c. water


2 TBS worcestershire sauce


1/2 c. sour cream


3 cups uncooked corkscrew pasta


Brown ground beef and drain fat.  In large skillet, combine soup, broth, water, worcestershire sauce, and pasta.  Heat to a boil.  Cook over medium heat 15 minutes or until cook through, stirring occasionally.  Add sour cream.  Heat through.  Serves 4.


 


Good luck!  My husband was the exct same way 16 years ago and I've slowly changed his diet from beef and pork, to incude chicken (still working on seafood....)  Always a work in progress.

Hi. For a quicker meal, try cooking 3 or more pounds of ground beef at once. Drain it, divide into meal sized portions and freeze in freezer bags (flat takes less room). If you use 1 lb per meal, that's cooking once and eating three times. ;) A meal we like on a hot summer day (it was 101* here yesterday) is Taco Salad.


1 lb. cooked ground beef


1 pkg taco seasoning mix (with water as directed on pkg.)


1 can beans (kidney, pinto, chili, black, great northern -- vary it to your taste), drained


Chopped onions


Mixed lettuce (the bagged kinds make this a no brainer)


Italian dressing (or your choice) -- or none


Grated cheese


Combine beef and taco seasoning mix + water. Add beans and simmer for 10 minutes. Toss lettuce with onions and dressing. Spread on plate and top with hot beef mixture. Sprinkle with cheese. Serve with chips.

Yam-Burger Pie


            Four cans Royal Prince Yams (15.5 oz cans) (save all the orange-pineapple syrup)
            {May be found at Stater Brother's markets}
            2 pounds of ground beef
            2 cups grated Longhorn cheddar cheese lightly packed
            1 1/2 cups Betty Crocker Instant Potato Buds
            2 teaspoons salt
           
1.  Brown ground beef and drain grease.
2. Add last four ingredients plus 1 cup of the syrup.
3. Mix well and put in 13x9 inch greased glass casserole.
4. Slice yams into small pieces and beat together with the rest of the syrup until smooth (like baby food).
5. Spread over top.
6. Cover with plastic wrap.
7. Heat in microwave oven until hot throughout; about 10-20 minutes until hot throughout.

May garnish with parsley after heating.

Serves 8-12

I created this recipe on a whim. I chose ingredients that I thought would go together good. It turned out great. My 4 children (now adults)and my now ex-husband and I love it.
