Canned Seafood

 I have tons of canned tuna (packed in water), salmon and crab (nice quality), and need some new ideas for meals.

I've made tons of tuna salad, and experimented the other night: saute spare veggies (sweet pepper, artichoke, cherry tomatoes) with garlic and onion and then adding the tuna to heat it up and blend the flavors. I then added it to a green salad with a hard boiled egg.

With the crab I have been perfecting my own crab cake recipe, but am getting tired of eating the left overs all the time!

Any other ideas?? I usually only need to cook for 1 or 2

regarding tuna fish-- i grew up on this simple dish. Good for Mom feeding 7 children on Friday nights.  we had it over rice.

hope you enjoy it.  its very simple and tasty.  My kids love it too.

Recipe for two:  

mix mayo, tuna, lettuce and corn adding black pepper and salt to taste.

 1can - corn - boil, rinse, and let it cool in fridge for a while; 2cans- tunas; 2tbsp - mayo; enough lettuce and celery for 2 people

-Broccoli Rice Casserole - Broccoli, cooked rice, 1 can tuna (you can use chicken as well maybe even try the salmon or crab), whipped egg whites, cream of chicken or mushroom soup. Bake and enjoy! Wonderful dish very filling.

This usually feeds 3-4, so you will have some leftovers.

-Add tuna to Mac and Cheese for a cheesy treat. Add a veggie and some sour cream and make it extra yummy.

-Make a pasta salad and add the tuna. Also seafood pasta salad.

-Tuna, Salmon or Crab Fettuccine. 

-You could make Gumbo with the crab. For fast and easy I use Zatarain's Gumbo and serve with rice.

-Fish tacos or enchiladas or even quesadillas. Crab is also great in these.

-Crab quiche you could use the salmon also. Or both and make a seafood quiche.

One night when i fixed fried fish, I made hush puppies and put 1/2 can of crab meat in the mix. It was really good, but will add the whole can next time. The mix was made from 2c. dry ingredients.
