QUICK, EASY AND DIFFERENT MEALS

Hello all,

 I have a family of five (including myself) and my schedule is always hectic.  For example, this evening I have to go and vote and when I get home cook dinner.  My oveN is on the fritz so I have been trying to find things to cook using my wok, stovetop, and slow cooker but I am running out of ideas.  Until I get my oven fixed this is the situation.  I was wondering if anyone had any ideas for quick and easy recipes.  Now, the thing is everyone in my house has different eating habits so I have to try and find meals that everyone eats.  HEEELP!!!

On hectic days, we make grilled sandwiches-everyone can make their own: different deli meats, supermarket rotiserrie chicken, cheese, sliced tomato, jarred roasted red pepper, dressing between sliced bread or sandwich rolls.Combinations are endless. Butter and grill on your pancake griddle or pan. For thinner sandwiches I've even used our waffle maker and pressed them like an electric sandwich maker. Serve with salad and/or bowl of soup.

i have a s imple recpie and you can easilyalter it.

1 can of butter beans

1 can of sliced potatoes

1 read onion

Cut the onoin into wedges,, saute them in a little oil , then add the drained vegetables from the can Season with dry mustard, celery seed, and pepper - I have made in in so many ways and it is always good. I si also nutritious

 

Here is another one  i got from Betty croker's  pasta book - i package of ramen, 1 jar of sALsa, 1 can of black beans, 1 can of corn, and enough water to make a soup - this is very good

 

This is yummy treat from taste of home - 2packages of grape Jello (3 oz). Make the jelli with 2 cups of water, when its a little cool add in a 21 oz can of pineapple and a can of buleberry pie filling - so - so so good

 

Here is one of my own. Take apiceof fish filet - spread with a mixture of maynaise mixed with any spice you want - copped garlic, dill- are good. make a lot the seasoned mayo and spead over the filet and bake it - it can't overcook the may keeps it moist

I have a Great recipe 4 a family of 5. Take a roast and defrost it cook it in your Crockpot and 1Yellow Onion, Chopped, 4 russet Potatoes; peeled and Quartered and chopped, Carrots, Celery, any Fresh vegetables your family will eat and season with salt, pepper, Garlic Peices and turmeric. Cook in slowcooker on low all day .You start it in the morning and it is ready aroun 4 or 5 serve with your favorite bread and I like to put out a bowl of fruit with my favorite fruits in it.

My husband and I were planning to make dinner for a few family members recently. When the few turned out to be 20+ and they were on their way to the house while we were at the store, I was a little panicked. The recipe happened to be an easy one. We doubled the recipe, threw some ready-made salad into a bowl with croutons and looked as if the whole dinner had been planned for the larger group. Angel hair pasta 1 bag frozen ready-to-eat shrimp 8 oz. container ready made pesto 1 sliced red pepper. Enjoy!

You can never go wrong with Chili mac. You could even have hot dogs with this or put the dogs in the chili mac.

One pot meal, chicken, beef or pork, green beans, sliced canned potatoes and can of stewed tomatoes ( onion and garlic flavor). Cook for about 20 to 30 min. You can use fresh potatoes but it will take a little longer to cook.

Spaghetti Goulash (Noodles, sauce, burger, corn) Yum!

Nachos at home with burger( i add hot sauce to my burger), refried beans, olives, green chilies, cheese. Topped with sour cream and salsa or fresh toms. Bean and cheese burritos are a great easy thing to make at home. Also Quesadillas are easy to make and you can use a variety of different ingredients that are left over from other meals. Bacon, hamburger, chicken, pork. You can even make it open face like a pizza. Since you have no oven you can make these in the microwave and each person came put their own toppings on them. :)

 
Kielbasa is a great meat to use in many dishes. We make a Cabbage and noodle dish, it has cabbage, wide egg noodles, potatoes and kielbasa. Use can make it with just the cabbage and noodles with the kielbasa or you can make it with the cabbage and potatoes with kielbasa if you don't want both the noodles and potatoes.

Then we make red beans and rice ( or you can buy zatterans) and put kielbasa in it, another great one pot meal.

Stuffed baked (or microwaved) potatoes are great. You can place anything in them you want. Some of our favorites- ham chicken or burger, broccoli, cheese with sour cream topped with bacon bits and sometimes salsa. Chili with cheese, sour cream and fresh tomatoes.

Hope you have your oven fixed, but I love my crock pot anyway!  This is a great, easy way to cook a pork roast in the crock pot.  Take your favorite lean pork roast, or trim the fat off a cheaper cut--I know, it takes time, but the grease on top of the dinner is SO unappetizing!  Ick!  Rinse the pork, then season it with your favorites --I'm not a pepper person, so I just use some seasoning salt.  Put the roast in your crockpot.

Mix together one can whole-berry cranberry sauce, a few teaspoons of your favorite mustard (the original recipe called for ground mustard, and I didn't have any, so I subbed!), and a little juice (cranberry or orange both work well) or red wine until it's a thin pasty consistency.  Pour over the pork, then crock until tender (I usually do about 8-10 hours on low).  If you have time, you can pour the juices into a pan and thicken for a gravy when the pork is done, but we usually just spoon the drippings into individual custard cups and use it as a dipping sauce.

 You can see that this is pretty easily adapted to your tastes--I've played with it a little, depending on what I have on hand, and it's always come out great!  Everyone I've served it to loves it, too.  Enjoy!

Hi, I have started making more then one meal at a time, here is how I do that, then I only have to put the main dish in the oven and add sides if needed! Here are three, if you want recipes, i'll add them later when i know,;-1:  3 times the meat loaf recipe and divide: make 1into a loaf, 1into patties, one into small loves.  2: make 2 times the spaggetti, eat one , layer the other into two layers with papperoni and mazzarela cheese and freeze.bake at 350 for 1hr.15 min.  3: Make a Chili base, divide into three: 1 makes chili, 1 makes sloopy joes, 3. makes tacos. I'll check back, :-)

 Hi,

This is any easy quick dinner that I always use when I worked nights .

One box of velveta shells and cheese

One package of kebabas

cut kiebabsa place it into the water and boil add noodles boil as usual drain add cheese sauce

Hi shortiemac, I have several recipes that I double or triple. Then I serve one and freeze the others for quick meals. so, without giving recipes, I'll just list them, cause you may have the recipes already. 1. 3 lbs. hambuger for meat loaf, after mixing with other ingredents divide into 3 loaves, either bake one and freeze the other two or bake all 3 and freeze two. 2.Double the batch of spahetti and freeze half in a baking dish,( I like to layer mine with pepproni and mazzarela cheese). Bake at 350 for 1 hr. 3.Chili, double or triple the hamburger mixture and divide into 3 parts, use 1 for the chili and freeze 2. useing for tacos and  sloopy joes. 4.When making a roast ,bake more them one, freeze and put in slow cooker with frozen vag. 5.if your family eats beans ,cook 2 or 3 times the amount and freeze in to meal sizes. The bad thing is that I never started doing this untill my children were grown,Sad

If you don't have a crock pot, get one!  It's a real lifesaver and there's so many things you can do with it!  My most favorite recipe is so simple.... 

Spray the inside of your crockpot.  Wash & clean 4 chicken breasts and put in the bottom of the crockpot.  Mix together:  1 cup Catalina salad dressing, 1 envelope of dry onion soup mix and 1 cup peach or apricot jam.  Pour this over the chicken and put it on low for about 6-8 hours.  To serve with it, we like rice so the sauce (which is wonderful) can be spooned over and green beans.  It is really a good, quick and simple recipe.  You can ALSO use this same sauce to pork chops OR as a "barbecue" type sauce for grilling.   Hope you & your family likes this!  Get online and check out crockpot recipes...a crock pot and an electric skillet are invaluable to have in your kitchen!!!!!!

I mostly use my crockpot during the summertime, to keep from heating up the house in order to prepare a meal.  This recipe serves 2-3 and is delicious and hope that you enjoy it as much as w have.


Line bottom of crockpot with 8 slices of Armour dried beef.  Wrap 2-3 chicken breasts with or without ribs & skin removed, with 2 slices each of low-sodium bacon & secure with toothpicks.  Put chicken on top of dried beef.  Open a (10-3/4oz) can of chicken soup and pour over chicken.  DO NOT ADD ANY SALT!


Cover and cook on high for 4-6 hours or on low for 8-10 hours.  We serve sauce over cooked noodles or rice.  NOTE:  Any cream soup can be used in place of Chicken.

Hi lori and everyone else that has crockpot.  You guys are making me soooooo hungry!  I'm supposed to get a crockpot soon, but in the meantime, I have a heavy duty BIG cast iron pot.  Some one who works as chef gave it to me.  I just use that for slow cooked meals, the only thing is that it is a royal pain to clean.  It works for the time being, but I guess I'm gonna have to start giving my husband the 'wiggly' eyebrow bit again.

Hi Chicagosinger:  Did you ever get your crockpot?  The advantage to having one, is that while you are gone either to work, shopping or visiting, your meal is cooking and not burning in the pot or sticking to the bottom of the cast iron pot.  I gave away my Big cast iron pot when I bought a larger crockpot and have never been sorry that I did!!

I don't know if this will help you a lot but when I was young we had really no time or money. My mom used to make this meal, and it sounds wierd but it is really good and easy and fast. all it is is mashed potatoes, tomato sause, hamberger meat, and onions. You make the mashed potatoes, put a hamburger patty on top, and then put the tomato sause and onions on top. the best part about it is that if someone doesn't like onions or tomato sause or whatever just leave that out of the equation!! Let me know how you like or dislike it. My family is the only one I know of that has had it so I would really love the feedback!! Thanks!

I use my crockpot all the time - in fact, I have 5 of them in assorted sizes and shapes.  I roast a whole chicken in my oval one.  Just place in pot & season as usual for roasting.  I place on low in the morning and when we get home just make rice or potatoes.  Delish!  You can then add everything to make soup for the next day.  Works really slick for us.

The early bird may get the worm, but the second mouse gets the cheese!
