Bisquick Gluten Free

Hi, I'm planning a pancake supper for 70-120 people next week and wonder how many 4-5" cakes we will get from one box


of Bisquick from the market, or if we go to Restaurant Depot is there an instituional size box available there and how many


will it make?  Does Bisquick take eggs or is it an istant?  How do the gluten free pancakes taste, any different from regular?


Any info appreciated, and I forgot how much you can do with this versatile product, thanks for the memories, time to get back to basics and ditch the expensive pre-packaged foods that are bad for your health overall.  I wished there were Bisquick coupons but no such luck, just for the other B.Crocker ready-made items and cereals :-(

The recipe on this site says a 60 oz box of Original Bisquick uses a dozen eggs and makes 90 pancakes.


Amazon.com shows Original Bisquick in 40 oz, 60 oz, 80 oz and 96 oz boxes. If the larger size boxes don't have a big batch recipe on them, you can use this recipe as a guide.

You cannot use this recipe for GF Bisquick though. The major ingredient in Original Bisquick is wheat flour and the major ingredient in Gluten Free Bisquick is rice flour. These two ingredients perform extremely different in recipes, so a Bisquick recipe needs to be modified somewhat to work with Gluten Free Bisquick.


Big-Batch Pancakes

1 box (60 oz) Original Bisquick mix
12 eggs
7 1/4 cups milk

Brush griddle with vegetable oil; heat griddle to 375°F. (Cooking surface is the proper temperature if pancakes are golden after cooking 1 minute 15 seconds on first side, 1 minute on the second.)
In 6- to 6 1/2-quart bowl, stir all ingredients with wire whisk or hand beater until well blended. Pour batter by scant 1/4 cupfuls or spoon batter by #24 scoop onto hot griddle.
Cook until edges are dry. Turn pancakes; cook until golden brown. (Griddle may need to be oiled between batches.) Makes 90 Pancakes


 


 


Amazon.com only shows 16 oz boxes of GF.


Gluten Free Pancakes

1 cup Bisquick Gluten Free mix
1 cup milk
2 tablespoons vegetable oil
1 egg

Heat griddle or skillet over medium heat or to 375°F. Grease griddle with vegetable oil if necessary. In large bowl, stir all ingredients until well blended.
For each pancake, pour slightly less than 1/4 cup batter onto hot griddle. Cook pancakes until bubbles form on top and edges are dry. Turn and cook other sides until golden brown.
