Chicken Quesadillas

Hello -- I'm going to be making Quick Chicken Quesadillas for a Super Bowl Party tomorrow.  My question is:  Is there any particular method to use when attempting to turn over Tortillas in a frying pan.  The recipe I found said to fry the tortilla on one side 6 minutes and then CAREFULLY turn over and fry on the other side (all the while the chicken and cheese are inside)  I'm foreseeing a disaster when I try to "flip" the tortillas!  Many thanks for your help.

I just use a large spatula and turn them over.  The melted cheese holds Quesadillas together quite well, so as long as you are careful to get the spatula under them to turn them it isn't really as hard as it sounds.

We love quesadillas and I have been know to take the whole tortilla , cover with cheese and what ever else you are using, place a second tortilla on top then place on  a cutting board, cut in half and place half in the frying pan at a time, easier to turn . Make sure you wait until the cheese has melted some before you turn it, as mentioned  in the previous posting it sticks together better. Putting a cover on the pan for a few minutes while you cook it over low heat  and the cheese will melt faster. Enjoy and good luck !

Many thanks:-)  for all the helpful suggestions.  Especially, the one about covering the skillet to help make the cheese melt faster.  I'll let you know how they turn out:-)

Just wanted to let you know that my Chicken Quesadillas turned out great for the Super Bowl -- everyone just loved them.  Many thanks to all for the helpful suggestions and timely responses,   Pam.
