Question about making cinnamon rolls


I want to bake some cinnamon rolls to take to church Sunday morning for a friend's birthday. The recipe always turns out great, but have a question on execution..... You have to let the dough rise for about an hour and ahalf, then you put your cinnamon rolls together, then let the individual rolls sit for another 30 minutes "or until doubled in size." So here is my question... if I decide to prepare the rolls the night before, and then bake in the morning, will they continue to rise and end up being huge jumbo monsters? Or will there be like a maximum capacity that they will just stop rising?




Or could I make the dough the night before, and then assemble the cinnamon rolls?




Just trying to avoid getting up super early, since we are normally up late Saturday night and I already get too little sleep that night. LOL

If you refigerate the dough it won't rise as fast.

Michelle_M, This may be to late, you can do all of it and put it in the frig the night before. It won't rise as fast so you should take it out of the frig about 30 minutes before baking. Lots of luck, Anna

i like to shape the rolls, place them in the pan, cover tightly with plastic wrap and refrigerate. they will continue to rise a bit overnight and then i pull them out of the frig to complete rising the next morning before baking. either i put them in the microwave oven NOT TURNED ON! along with a glass of very hot water which i change after 30 minutes, or in a covered plastic box with the hot water which creates a warm moist environment and speeds rising.
