Bridal Brunch suggestions needed...

I have been asked to plan and prepair the menu for my nephews bride to be brunch to be held on July 17th.  I woud appreciate any recommendations since I have never planned a bridal brunch before.  Sorry for the last minute rush but I was just asked last night, yikes!

How many people are you expecting? Is it formal or more informal? Since it is summertime, I would suggest the following...


Mini Quiches: This is a yummy recipe: http://www.bettycrocker.com/recipes.aspx/garden-phyllo-quiches


Cupcakes: Use the bride's colors for the wedding to make cupcakes. If the colors are white and lavender, make white cake with lavender frosting. You could just use boxed cake mix and food coloring to keep it simple. You can also add pureed fruit, flavored extract or other ingredients to add color and flavor. If you get really creative, write the bride and groom's initials on the cupcakes!


Finger Sandwiches: simply make several normal, but not too tall sandwiches with two regular pieces of bread - crusts removed - and then cut them into quarters diagonally. Secure each mini-sandwich triangle with a toothpick. These look fancier with any kind of simple sandwich: PB & J; chicken salad; egg salad; cucumber, yogurt and dill, brie and cranberry, anything!


Pesto Pasta Salad: Combine any short pasta (penne, rotini, gemelli, cavatappi) with pesto (homemade, canned or from a mix), sundried tomatoes, black olives, chunks of mozzarella cheese, shredded or shaved parmesan cheese and anything else that you think would be tasty in there, like zucchini or halved fresh cherry tomatoes. Yum!


Fruit Salad: Cut up and combine any fruits and berries that look exceptionally tasty in the store when you go shopping. I don't even add any kind of sweetener, sauce or glaze. Everyone loves fruit salad and eventhough it is SO simple to make, people always seem to appreciate it and prefer it over store-bought.


Veggies and dip - simple, easy and always appreciated by guests


Mango Green Tea: Brew a pot of green tea or regular iced tea and combine it with a prepared quart of Crystal Lite Mango Green Tea and float some sliced limes and lemons. This is really tasty!

How many are attending is part of the problem...I know 10 for sure but numerous others have been invited to I thought I would plan for 20 guests.


I love your suggestions and think I can pull this off without a problem thanks to your help.

Depending on what you want to serve, I just attended a very laid back shower a couple weeks ago and it included Mimosas (I think that's how you spell it), which were a huge hit, and a very yummy cheese roll and crackers. Fresh Strawberry lemonade and tea are also very good for the summertime.


Maybe some finger sandwiches with egg salad or chicken salad. Could be served on bread or crossaints. Fruit salad, or chocolate covered strawberries are fun too!


Cupcakes are a great idea for dessert because they are easy and don't take a lot of effort.

my bridal brunch was wonderful and the host served breakfast items...it was held at aroud 11 am and she made mimoas-a HIT! there were mimi muffins, baby sausages, fruit tray/salad and a breakfast casserole...very yummy, everyone loved it!! the breakfast casserole was super easy and yummy and several people, including myself have asked for and made the recipe since with success! it was basically cooked ground breakfast sausage mixed with eggs and cheese, poured over a few slices of bread in a glass baking dish...baked until eggs were done. i have never been able to get mine to turn out as good as hers but im sure you could search online and find a good/easy recipe to play with before hand...my husband and kids even love it and it good as leftovers too!


anyway hope this helps, like i said it was all a great hit and such a nice detour from the same old finger sandwiches and chips/dips, yet still so easy and simple!! everyone loves a good breakfast bar! you could always experiment with french toast sticks with powered sugar or anyhting else fun...and then of course, cake or cupcakes!! (in her colors of course!!)


good luck! dont forget to buy some fresh flowers-it will really help make the occasion special! and then give them to her to take home! (maybe find out what kind she will have at the wedding!)
