What's your favorite pancake?

Pancakes are loved all around the world and are one of the many foods that unite us, which is why Ken Albala uncovers the delicious historical journey and significance of the pancake in Pancake, A Global History.

I’m ecstatic about this read because I LOVE PANCAKES!  And as a foodie, nothing interests me more than the history and relevance of one of my favorite treats.

Today Emily and I were discussing what we know about pancakes and we didn’t get much further than smell, taste, texture, and garnishes, so I look forward to being enlightened about their history to share with friends and family.

I would love for you to read along and discuss the glorious history of pancakes!  It’s an easy read, so make sure to pick up the book from your local library or book store and read along.

My favorite pancakes are a tie between Banana Walnut with Caramel on top MMMMM! And regular Buttermilk Pancakes with some strawberries and whipped cream!


I've been dying to try the Cheesecake Pancakes!!!



Has anyone tried them?  Are they as unbelievable as I think they are?

lindsaywoo, You should try them, they are very good. I did like them better with the cream cheese shredded instead of cut up.  My favorite pancakes is home made oatmeal pancakes with peanut butter and butter.

Stir a pancake,
Pop it in the pan;
Fry the pancake;
Toss the pancake,
Catch it if you can (101).

Talk about a book that will make you crave breakfast! Pancake, A Global History by self-proclaimed “enthusiastic food historian” (39) Ken Albala, is a fun journey down Pancake Lane – accompanied by some fantastic photos and recipes.  You get to see everything from their history, to their meaning in society, to how different cultures celebrate with pancakes, etc.

Definition:
A pancake is considered, “any form of starch can and has been used to make pancakes through the annals of history … it’s not what goes into the bowl that defines the pancake, but what comes out of the pan” (9).  “Pancakes … can be sweet or savoury, adorned or simple, consumed during any meal and in any setting” (14).

One of the most fascinating things I learned is that, all around the world, the pancake is associated with comfort and family values.  Although all pancakes are different in different cultures, their meaning remains the same throughout.  That’s such a rare and special thing.

My favorite pancake that I learned more about is the Russian Blini.  In Russia, the Blini is served on New Years with champagne, and after funerals (96); it is considered to be “one of the most expensive and elegant of foods” (97).  O-la-la, how fancy …

Blini

Ingredients
2 cups buckwheat flour
1 tablespoon baking powder
2 eggs
milk (enough to make a thick pancake batter)
butter for frying
sour cream to taste
osetra caviar (the best you can afford)

Directions
Mix together the flour, baking powder, eggs, and milk.  Pour into a hot buttered frying pan to make small bite-sized pancakes.  Add a dollop of sour cream to each and top with the caviar.  Serve with ice-cold vodka, or champagne and make a toast to Tsar Nicholas (111).

It is just so interesting to me, considering in the US, pancakes are such a lazy-Sunday-morning type of meal. Anyways, we're always chatting about pancakes here:

Cinnamon griddle cakes- All time favorite!


Ingredients:









1 1/2 cups all-purpose flour

3 tablespoons white sugar

1/2 teaspoon salt

4 teaspoons baking powder

1 tablespoon ground cinnamon

2 eggs, beaten

1 cup milk


2 tablespoons corn syrup

1/4 cup butter, melted

1 tablespoon vanilla extract

 



Glaze:

2 cups confectioners' sugar

2 teaspoons vanilla extract

1 tablespoon milk

I love buttermilk pancakes sandwiched with an over-easy egg in the middle.


I also love topping pancakes with peanut butter--super yummy!

my favorite hands down are blueberry buttermilk pancakes. i like to separate the eggs and add the whites, stiffly beaten, at the end so that they are really fluffy and tender. i don't use any sugar in my pancakes so i can get all added sweetness from maple syrup. tip for beating egg whites so they never dry out and can be whipped really stiff: use 1/8 teaspoon of cream of tartar per large egg white!

You must try Pumpkin Pancakes.  These are the best, especially around the holidays.


For a spiced breakfast treat, whisk 1 1/4 cups all-purpose flour; 2 tablespoons sugar; 2 teaspoons baking powder; 1/2 teaspoon each cinnamon, ground ginger, and salt; 1/8 teaspoon nutmeg; and a pinch of ground cloves. In a separate bowl, stir together 1 cup milk, 6 tablespoons canned pumpkin puree, 2 tablespoons melted butter, and 1 egg; fold mixture into dry ingredients. Melt some butter in a skillet over medium heat; pour in 1/4 cup batter for each pancake. Cook pancakes about 3 minutes per side; serve with butter and syrup. Makes 8 to 10.

i like to use any pancake mix, and add a splash of vanilla and a little cinnamon, then once they are cooked top with coolwhip and blueberries
