Cooking for 100 People ..on a TIGHT budget!

I have recently begun cooking along with several volunteers for a local Day Shelter for Women  and children. I recently was "drafted" to be the "Head Chef" for a day. We genrerally cook for 90-100 people. Beforehand, I went online to Bisquick.com to look for large quantity recipes. Sadly, the largest I found was for 12 people. Nevertheless, I decided to take the plunge and multiply it by 4 for each of 2 huge "steam pans" as they are called. I added/multiplied  the ingred. per the recipe for "Impossible Cheeseburger Pie for a Crowd."  We decided to add a lot of veggies because our meat budget is very tight.  I think we cooked 10-12 LBS. of GROUND BEEF, and added many cans of mixed veggies,corn, and green beans.( DRAINED  FIRST.) We are lucky TO GET LOTS  OF SHREDDED CHEESE, AND TOPPED IT GENEROUSLY WITH THAT.( OOPS! Sorry,I Always hit "caps lock" by mistake.) Anyhow, the results were delicious and the guests and volunteers ate every last bite..along with a huge green salad and a nice dessert. Just thought I'd share this for other "Soup Kitchens" and shelters that feed large groups daily. This is a very satisfying ministry and a chance for me to cook for  hours at a time..each luncheon takes 3-4 hours of prep and cooking and/or baking. I've found the perfect pasttime for my Retirement!!

That was a wonderful story. You certainly are making your retirement special, your group is lucky to have such a good cook helping out and on top of all that you love to cook, what a plus !

I have found that a good source for quantity cooking is in cook books put out by churches or organizatons. These are thrifty recipes used for their fund raiser dinners and affairs. Thrift stores, Goodwill or Salvation Army shops are a good place to find these books very cheap.

Potato (or any) soup is always a budget-friendly and very good option when cooking for a crowd.
