Found in the pantry...

I'm going to be moving to another country in a couple of months and need to use up my pantry. I have a fully stocked pantry but I could use some ideas for these things I bought for specific recipes. Any ideas? I'm not looking for one recupe that uses all of these or anything, just some ideas that might use one or two of them at a time.


1 Large can of salmon


2 cans of Libby's creamy style sweet corn (corn bread recipe anyone?)


3 large cans of sweet corn


3 cans of cannellini beans


1 can red kidney beans


2 Costco size jars of marchino cherries


lots of dry polenta (we don't have cornmeal), flower (3 bags!), wild rice, 2 boxes of Progresso bread crumbs

I make polenta/grits and spoon chili over it for a kind of mock tamale dish.


You can use the creamed corn and polenta to make a sweet corn cake (it's like a firm, sweet corn pudding served with an ice cream scoop) that is served at Mexican restaruants like Chi Chi's, Chevy's, El Toritos, etc.

Those who forget the pasta are condemned to reheat it.

I like creamed salmon on toast (also called Salmon Pea Wiggle) or salmon cakes for the salmon and corn chowder for the corn.


Anything you don't use up before the move can be donated to your local food shelf.  Times are hard out there and many food shelves are hard up for donations.

Sounds like a good challenge! :D I think we can all help!

I would do searches on all the ingredients...

I thought this looked good for the sweet corn and all of these maraschino recipes look like fun. Also- I thought these wild rice recipes looked worthy to make!

Here are some past convos on canned salmon.

For the beans... I made this Southwestern Bean Bake last week and I thought it was yummy! You can always make a quick chili or minastrone

Also- I think polenta is cornmeal. One you see that link- check out this one.

Wow! Thank you all so much! You all have come to my rescue! I had a really busy week, but plan to make a bunch of these ideas next week. In fact, I nearly made the Southwest Bean Bake tonight but my hubbie asked to have later in the week! I'll let you know how I do with the recipes..

Use the bread crumbs to coat chicken or pork chops.  Dip the meat in an egg wash and dip in bread crumbs and bake. Fix the wild rice as a side dish.


 


I have used cannellini beans in salad.  I combine the beans, small amount of cooked pasta, 1 can of tuna and marinated artichoke hearts.  Add salt, pepper and additional olive oil to taste.
