one of  best meals is hamburger steak with gravy , and green beans androlls and a rice , and then for dessert we have pudding.this can be done .

1-2 chicken breasts or boneless pork


2 bags of stirfry vegtables


1 bottle of teriyaki sauce


stir fry meat with teriyaki sauce and add veggies cook to desired tenderness and enjoy!


serve with brown rice if desired.

I recently tried this recipe i got out of a magazine.


spicy chicken


 


What you need;


4 boneless chicken breasts, skin off. 


6 slices pepper jack cheese


packet of Taco seasoning


Toothpicks,


2 tblsp of oil or olive oil


 


 


Pound each chicken breast flatter, not see thru though.


Place 2 strips of pepper jack cheese just slightly next to the middle of the chicken.  Fold chicken over the cheese and place toothpick to hold it.  Place a few toothpicks to keep the chicken folded over


coat each chicken breast with the taco seasoning (i used a basting brush). 


Place each chicken breast in a heated skillet (that has oil in it) brown each side of the chicken breast then place in a lightly greased pan.


Place in the oven (preheated 350) for 25-30 minutes.


This is good with rice, and fresh veggies. My husband absolutely LOVED this.  It is one of those omg this is good recipes you can hear in the other rooom :D

Another variation is to crush ritz crackers and add taco seasoning to mixture.
Dredge rolled up chicken in the mixture.
Bak for 20-25 min at 350.
I also use swiss instead of pepper jack.

Call it what you want but i call it the best chilii for minnesotans! lol Those of you who think ketchup is spicy!


1.5 lbs hamburger and 1/2 onion


3 lg cans of tomato sauce


2 reg sz,kidney beans (rinsed)


1 can of corn (drained)


chili powder to liking!


Brown hamburger and onion, drain combine all ingredients togetherin a crock pot or a heavy pot,you can ether warm this thru in a matter of minutes or cook in a crock pot all day!  ITS GOOD!!

My favorite $10 and under meal is Eckrich sausage sauteed with sliced green and red bell pepper, and onion seasoned with black pepper (cook until peppers and onion caramelize) and served over steamed rice with cornbread. YUM! Broccoli is a great addition to this dish.

I make black beans and rice.  Very tasty!


Here's how:


Saute one medium/large yellow onion in olive oil in skillet  Add one can of drained and rinsed black beans and maybe a 2/3 cup of water and cook over medium heat.  I put in about 1 1/2 teaspoons of Ground Cumin - you can do it to taste - and good sprinkle of salt.  You can also add a pinch of cayenne pepper - if you like a little kick!  Finally add a can of drained and rinsed Green Giant corn niblets.  (You can also use thawed frozen corn, about 1 cup or so?)  Continue to cook on medium until it's all heated through - add more water if needed. 


I rinse the corn and beans ahead of cooking to get the extra sodium out, then add my own salt to taste.


Serve with rice - I prefer Basmati for the flavor but any would work.  Also, when I have more time, I like to have cornbread on the side.


It's one of my favorite quick, easy and on-hand meals.  :)

Meat Roll with Gravy, Mixed Veggies & Salad


Impossible Chicken Pie, Salad


Spaghetti & Meat Sauce, Salad, French Bread


I could go on and on,  but these are our staples.


 


Meat Roll


1 recipe Bisquick Biscuit Mix Dough prepared


1 lb hamburger


1 onion


Salt & Pepper to taste


Brown Gravy mix


Brown ground beef and onion together.  Drain, salt & pepper to taste.


Roll dough out to approximately 9 x 11.


Spread beef mixture over top evenly.


Roll 11" edge up jelly roll style.


Place on cookie sheet and bake at 375 for 30 minutes.


Slice into 2-3 inch slices.


Pour gravy over top of slice on plate.


We use frozen mixed veg, and a simple salad.

What is the recipe for Impossible Chicken Pie please.  I really want to try the meat roll.  Do I make the biscuits that are on the box or something else.  I haven't used Bisquick in a number of years.  Thanks.

a big hit for the hungry guy in my home, is a stuffed ham and cheese croissant.  I get the pilsbury crescent rolls, and lay 2 of them side by side flat to make a rectangle, then put some deli sliced ham on it and a ton of shredded cheddar cheese, and then take two more cresents, keeping them connected and flat and lay on top of the ham and cheddar sealing every seam along the edges and top to be sure it doesnt drain any cheese.  bake it at 350 for about 15 minutes.  Believe it or not, theyre pretty filling.  I cant even finish 2, so i just make a can of soup on the side.

another super easy and cheap meal is chicken noodle casserole.  I just get one of the big family size cans of cream of chicken soup by campbells, a bag of egg noodles, and canned chicken.  I boil the noodles, drain, and put the soup and chicken in and mix it up really good.  Sometimes I make it with cream of mushroom soup, and tuna instead.

Ham and Potato Casserole


 


2 pouches instant potatoes (garlic and herb is yummy)


1 ham steak


French's fried onions


 


Make potatoes according to package directions (I usually do this in the microwave in a 2 qt corningware dish)


Chop ham, stir into prepared potatoes.


Top with onions


Bake at 350 for about 30 minutes.


 


It would also be yummy with cheese under the onions but I'm the only one who eats cheese in my family :(


I'm hungry now, I may need to go make this tonight!

SALMON CAKES w/ GRITS AND LEMON SAUCE


 


This is what we like when the charge card bills come in.  We eat our fill for $3.00! 


15 1/2 oz. can of salmon, juices reserved
1c. fine bread crumbs (I use my french bread)
1/2c. finely chopped celery
2T. chopped scallions
1/2t. dill weed
2 eggs, slightly blended


De-bone and flake salmon.  Combine ingredients and shape into 4-6 patties. (The mixture is somewhat dry and crumbly, just do your best.)  Chill until ready to fry.  Fry in 2T. oil until browned on both sides.  Serve with sauce on the side.


Sauce:
2T. butter
2T. flour
salmon juice with milk added to measure 1 1/4c.
2T. lemon juice
1T. chopped parsley
1/3c. chopped fresh mushrooms


Make a white sauce.  Add lemon juice, mushrooms, and parsley.  I don't add the mushrooms, because my family does not like them.  So, that is completely optional.


I serve this with Grits (might also be good with mashed potatoes) and a salad.

If you like Salmon, here is another version:


Easy Salmon Quiche


The men at our house do eat quiche.   Adapted from Bon Appetit, June 1983, page 42. Since it makes two pies, if your family isn't bigger than four, take one to a neighbor, it makes me very popular!


15 1/2 oz. canned salmon
3 eggs, beaten
1c. sour cream
1/4c. mayonnaise
3-6 drops Tabasco sauce
1c. shredded cheddar cheese
2 scallions, chopped
1/2t. dried dill weed
2 baked 9" pie shells


Add water to the salmon liquid to equal 1/2c.  Pour into a large bowl.  Stir in eggs, sour cream, mayonnaise, and Tabasco.  Add salmon, broken into bite size pieces.  Blend in cheese, onion, and dill weed.  Divide between the two pie shells.
Bake at 325* until set, about 40-45 minutes, covering rim if it browns too soon.

Smile  My family really enjoys when I take a box of just about ANY Hamburger Helper, prepare as directed, but, I cut back on the water just a tad, because I add a can of mushrooms and a can of Rotel or store brand tomato w/ chilies. IF I happen to have it, I also add some cheddar on top before I serve, while it's still hot, it melts.  My husband prefers to put Parm. cheese on the Philly Cheese steak one.  Yummy. Quick, cheap and great meal!!

I agree, this hamburger helper is one of the tastiest. Try adding some sour cream and shredded cheese just before serving. It's really very good.
