Hi and welcome lilbigpump. Luv the  pic.  Reminds me of my son.  How about this ?

BAKED PORK CHOPS

  • 3/4 CUP SEASONED BREAD CRUMBS (REGULAR IS OK IF THE OTHER IS NOT ON HAND)

  • 1/4 TEASPOON GARLIC POWDER

  • 1/4 TEASPOON ONION POWDER IF AVAILABLE

  • 1/4 TEASPOON BLACK PEPPER(TO KICK IT UP A NOTCH, ADD A LITTLE CAYENNE)

  • ANY OTHER SEASONING YOU FEEL LIKE EXPERIMENTING WITH

  • SALT TO TASTE IF YOU USE

  • 4 PORK LOIN CHOPS

Preheat oven to 375 depgrees.  Spray a non-stick baking pan with non-stick cooking spray.  Place crumbs and seasonings in a quart baggie, shaking well to blend.  Place one chop at a time in baggie, shaking well to evenly coat.  Place all chops in pan and bake approximately 30-45 mins. depending on thickness of chops.  Cover lightly with foil if they start to brown too soon, removing the last five minutes.    This goes well with any of Betty Crocker boxed portatoes.  Or you can do your own.

MICROWAVE MASHED POTATOES WITH A TWIST

  • 3-4 POTATOES-CUBED

  • 1/4 CUP FINELY CHOPPED ONION

  • 3-4 TABLESPOONS WATER

  • 1/4 TO 1/2  STICK BUTTER OR MARGERINE

  • 1/4 CUP SOUR CREAM IF ON HAND

  • 1/2-3/4 CUP MILK

  • SALT AND PEPPER TO TASTE

Combine the first 3 ingredients in a medium, covered casserole dish.  Microwave on high till potatoes are tender.  Add all other ingredients whipping well to make mashed potatoes.  Add more milk and or butter if necessary, going by taste preference.

lilbigpump:

Congrats on becoming a new father!

Have you embraced the slow cooker yet? To me, it's worth the investment. The fix it and forget it will be important as your time will be pulled for more important things! When my sister first had her baby- she heavily relied on her slow cooker.

Also, if you haven't yet- I would sign up for the Dinner Made Easy Newsletter for weekly inspiration.

I don't know what you'd call this-I kinda made it up, but it's easy and quick.(tummy fillin too!)

1 box scalloped potatoes

1-2 handfuls cooked,chopped ham(leftover is good)

2 handfuls frozen veggies,any kind(I use california style,broccoli,cauliflower,carrots)

2 handfuls shredded cheddar cheese

Make potatoes in a pot, except put the water, milk, butter in first to let it melt, then add sauce mix.

When mix dissolves, add potatoes, veggies, ham and i handful of cheese.

Mix and pour into a greased small baking pan(you can spray it with Pam)

Top with the other handful(or more) of cheese and follow the baking directions on box.

Let cool for at least 5-8 minutes before serving. It will be hot!!!!

Hope you enjoy!Even the grandkids love this, so I double it and make a bigger pan.

EZ and economical!

Thank you tinagrvtwn.  This simple recipe sounds delicious.  Will try this, as it sounds like a keeper.
