11 Replies to Taco Night: What it your favorite taco filling?

My family LOVES chorizo on their tacos, along with a little ground beef, refried beans, lettuce, tomato, fresh corn, cheese and little ranch dressing.

We really like cheese, beans, lettuce, ground beef, and garden ripe tomatoes.  If all else fails, there are some nuns here in town who make killer tacos for fundraisers for their church.  Always a good choice if you can't make your own!Smile

Hi Catec, I'd like to take credit for this, but a co-worker of mine came up with it. We worked at an ice cream shop and wanted tacosSmile. She called them 'American tacos", Crush fritos or corn chips on your plate, top with sloopy joe mix and any toppings that you like. We have these instead of tacos because there eaiser to eat.   I like everything that I can think of on it! Granna2

I have to say that this time of year, I love tacos with all the fresh veggies that are in season. I made this a few weeks ago and loved it!

Turkey, I am minimizing how much beef I eat.  The children love Turkey Tacos with alot of cheese!

Wink My family loves to add to the beef filling. lettuce, tomatoes, onion, cheese, sour cream, & hot sauce.


Usally a soft shell inside the hard shell. They also like soft shells add the meat with seasoning, cheese sauce,


layered, bake, then put all the toppings on and serve.Smile

Meat;  2 lbs hamburger,  Spanish Gardens Taco seasoning, chopped onion.  All browned in shillet.


Tortillias;  FLASH fried in 1/2" of grease (About 20 seconds). Tortillias are to stay as limber as a dish rag.


Sauce;  Store bought Chillie Sauce, with a pinch of cinnimon and hot sauce,


Toppings; Grated mild cheddar, diced garden tomatoes, lettuce finely chopped.


Assembly;  Cheese goes in first, 2nd; meat, 3rd two spoons of sauce, then tomatoes, then lettuce.


Eating;  Hold taco buy the flaps (lefthand) with a tablespoon at the bottom (righthand). Everytime you take a bite catch the juice with the spoon and return it back to the top.


You have to eat quick, or the shell will soon get soggy and fall apart.

Sometimes we put guacamole on our tacos and sometimes we put queso on our tacos instead of shredded cheese.  Both are wonderful!

Here's one we always use:


 


Homemade Taco Seasoning Mix


4 Tbs all purpose flour


4 Tbs onion powder


2 Tbs chili powder


1 tsp garlic powder


2 tsp dried oregano


2 tsp ground cumin


2 tsp table salt


 


Mix well. Store in airtight container.


Makes about 3/4 cup.


 


 


Here's how we use it. 


 


Crumble up 1-pound chub of Jenno-O ground turkey in a 


skillet, sprinkle about 2-Tbs of the 


above taco mix over the ground turkey meat.


Saute until meat is no longer pink.


 


Use as taco filling with flour or


corn torillas along with cut up tomatoes,


shredded cheese, chopped onions and 


shredded lettuce.


 


 


Our homemade taco seasoning adds a lot of wonderful flavor to the 


ground turkey. So much so, we now prefer it to beef in our tacos.

Those who forget the pasta are condemned to reheat it.

Here's another ground turkey recipe:


Homemade Chorizo


Ingredients


1 lb ground lean pork, ground turkey can be substituted
1/4 cup cider vinegar
2 tablespoons chili powder
1 tablespoon sweet paprika
1 teaspoon ground cumin
1 teaspoon table salt
1 teaspoon garlic powder
1/2 teaspoon ground coriander
1/2 teaspoon dried oregano, crushed
1/4 teaspoon red pepper flakes
1/8 teaspoon ground cloves
1/8 teaspoon ground black pepper


Directions


Combine chili powder, paprika, cumin, salt, garlic powder, coriander, oregano, red pepper flakes, ground cloves and black pepper in mixing bowl and stir until well combined.


Add cider vinegar and stir until dry ingredients are moistened.


Add ground meat and knead until spice mixture is well incorporated into the meat.


You can use the chorizo immediately, but for best flavor development, place chorizo mixture in an airtight container and store overnight in fridge.


Form chrizo meat into small patties or just scramble and fry the meat in a skillet until done.


We serve it in flour tortillas along with scrambled eggs for breakfast.


Those who forget the pasta are condemned to reheat it.
