Creamy Egg Chive dip 


2  3oz. pkg. cream cheese with chives


2 hard boiled eggs finely chopped


2 tbsp mayo   


1 tsp mustard


1 tsp Lea & Perrins


Salt & pepper to taste 


2 tbsp milk (optional)


 mix cream cheese, mayo & mustard until well blended add salt, pepper  & lea & perrins. mix well. Stir in chopped eggs.  


Excellent with raw veggies or corn chips. If too stiff for dipping add in the milk.

I decided to test this recipe out before Sunday: Parsley Deviled Eggs! Loved how easy these were- The hubby asked if we could make them again for Easter (Twice in one week? You know it's a winner recipe when...) Big Smile

To make your tuna & noodle casserole or lasagna more filling, add 1 cup of chopped egg to your receipe. I guarantee it will stretch the number of servings in the receipe!

I have to say, I'm loving cream cheese in my egg salad!

Here's my basic recipe 4-5 hard boiled eggs chopped.

1/2 bar of cream cheese

1/4 cup mayo

1/3 cup dill relish

2 tbls of mustard

1 tsp of Paprika

1/4 teaspoon of pepper

Just a couple of shakes of salt.

1 cup celery (chopped)

Optional: (I've also put cucumbers in the mix for fun and it may make a little more watery... but you still get that yummy crunch)

When I have extra hard boil easter eggs left over I use themin these two ways.


1) I peel them cut them in slices and put them on a plate an pour a little olive oil over them add some salt and pepper or a little parasem cheese and eat them like a salad


2) I toast about eight slices of toast and butter them then put the toast  in a casserole dish put slices of the eggs on the toast.pour a can of mushroom soup over the eggs and then sprinkle some swiss cheese on top and bake at 350 until the cheese is melted and warm. cut in squares

I take a couple of the eggs and smash them with a fork.  Then I add a little butter, and warm it in the microwave for about 20 seconds - just to melt the butter.  Then I add salt, pepper and a little ketchup - yes ketchup!  Smash it all together and heat it in the microwave until warm.  I always serve it with toast.  This is something my dad showed me when I was just a little girl.  It sounds a little gross, but it sure tastes good!!  My picky daughter wouldn't even look at it.  I talked her into tasting it with the promise she could spit it out if she didn't like it.  Now we make it all the time, and not just at Easter like I had it growing up.

I usually make a batch of pickled eggs, that way they can last awhile and my husband loves them.

i love them on salads. Also they are great for making egg salad sandwiches.

I like to add chopped hard boiled eggs to my stuffing before I bake it.


I also love egg salad...a little mayo, a smidge of mustard, some pickle relish, and onions...served on toast...can't be beat!


I also love spinach salad with sliced eggs - very springy!


I have also been known to add them to my tuna salad...gives another texture and flavor!

Big Smile Instead of hard boiling.  Get a long needle to poke a hole in each end.  Be sure to break the yolk with the needle and then blow out the egg in to a large bowl.  Use eggs for a breakfast bake.

Nothing better than a great egg salad sandwich on a crusty hard roll Easter evening for a light supper. YUM!

We do all 4 things, deviled eggs, egg salad, and sandwishes, as well as just eat them. When I had a lot, which I don't know, I would also pickle them in hot pickle juice or beet juice. There good that way and last a long time if not eaten right away.  Granna2   P.S. pickled with or with out beets makes a nice gift also!  Granna2

Egg salad,pickled eggs(beet and vinegar ) but around our house it's creamed eggs on toast or english muffins. 


2 cup recipe for white sauce (butter, flour, milk or 1/2 &1/2) medium thick


dash of caynene pepper


salt  and pepper to taste


6-8 hard cooked eggs,chopped


  prepare sauce , add eggs, stir in gently, cook untill eggs are warm.


  pour over toast or muffins.


Some times i'll add a scant tsp. of  spicy mustard and leave out the cayene.

Age is just a number--but numbers ADD UP !!!!!!!
