Breakfast casserole

 


Super Angry   I want to make a breakfast casserole that I can freeze and heat up in microwave for our camping trip. Can anyone help me out with this. It would be so much easier for a party of 10 for me. Any help would be appreciated. thanks a lot Jazzelise

This has been a family favorite for years! It is delicious! Hope this helps!


Cinnamon Roll Strata With Apples and Sausage


4 cups cubed (about 1-inch pieces) packaged cinnamon rolls


One 8 oz. package breakfast sausage, cooked and cut into chunks (patties or links is fine, as long as they are skinless)


2 tablespoons butter or margarine


2 Granny Smith apples, peeled, cored and sliced


2 tablespoons brown sugar


1-1/2 teaspoons cinnamon, divided


1/2 teaspoon nutmeg, divided


1/3 cup raisins


6 eggs


2 cups milk


1/4 teaspoon salt


2 teaspoons powdered sugar


Warm maple syrup


 Directions:



  1. Spread cinnamon roll cubes in a 9" x 13" greased baking pan and toast in a preheated 300-degree oven for 15 minutes. Remove from oven and cool.

  2. In large skillet heat butter over medium heat until hot (do NOT let darken). Add apples, brown sugar, 1/2 teaspoon cinnamon and 1/4 teaspoon nutmeg. Sauté about 5 minutes, until tender and caramelized. At the last minute add the cooked and chunked sausage. Stir to coat evenly. Transfer to a plate and COOL (very important step!!!).

  3. Layer apple-sausage mixture and raisins evenly over the toasted cinnamon rolls in the 9" x 13" baking pan.

  4. Whisk together eggs, milk, salt, 1 teaspoon cinnamon and 1/4 teaspoon nutmeg in a medium bowl. Pour over ingredients in pan, cover and refrigerate overnight.

  5. Remove strata from refrigerator 45 minutes before baking. Uncover and bake in preheated 350-degree oven about 35 minutes or until set in the middle.

  6. Sprinkle top with powdered sugar and serve with warm maple syrup.


Note: After baking, this can be cooled, cut into serving portions and individually frozen. Then microwave each portion and top with hot maple syrup before serving.

What does that mean? Are they frozen? Fresh? Could I make my own and use that? I'm curious because of the 35 minute cook time.

These are already baked cinnamon rolls.  You can bake your own and cut up four cups.

1/2 loaf challah bread cubed


8 eggs


1/2 heavy cream


1/2 cup chopped bacon or cubed ham


1 cup cheese  (your choice)


salt and pepper to taste.


mix all together and put into a 13x9 greased pan,  Bake for an hour.


I sometimes add frozen broccoli or peas.    Or instead of using bread you can add a bag of frozen cubed potatoes

I have a great recipe for that.  I didnt think I would like it at first because it has bread in the bottom and I thought it would turn out soggy but it does'nt it turns out really good.  Take a baking pan basically any size you choose (might have to double recipe if you use a different pan). I used this amount for a 9 by 13 regular cake pan.  Take some sausage or bacon or whatever you wish and cook  and set aside.  line the pan with several slices of bread and alternate the meat and shredded cheese and when you are done filling pan scramble up some eggs and pour over all of it. (the amounts of the ingredients really depends on how much you want to make). Then bake it at 350 degrees for I think it was an hour or until eggs are set.  and you can freeze it and warm it up in the microwave and it is sooooo good.  I dont even like eggs very much and I like it.

Not everyone that camps does it in a tent. LOL  We have a 40-ft RV, complete with microwave, convection oven, gas grill, refrigerator, freezer, satellite TV, washer/dryer, shower and toilet, ceiling fans, central air and heat - and we enjoy luxury camping!


 


 


I think any standard breakfast casserole would work just fine.  I would bake it first and let it cool completely.  Slice into serving portions, wrap in plastic wrap and freeze.  I would let them thaw completely before putting in microwave - so they only stay in there long enough to heat through, not cook again and get rubbery.

That's my idea of camping!  You'll never get me out there in a tent, sleeping on the ground, cooking on a campfire ever again!  I have friends that go to "camp" every year at the Outer Banks and even have a pool and a eight bedroom house!

Here's a recipe that could be made and baked completely ahead of time and then each brunch cup could be individually frozen.  Then each could be reheated in the microwave for about 1-2 minutes.  It makes 12 brunch cups, but you could double the recipe if you think your group might have big appetites.  www.bettycrocker.com/.../bc13691a-5c5a-49d6-926c-c190a9dc1c3c
