I don't know why but I have never had meatloaf in my entire life that I have liked. My honey and I were discussing this. We both dislike meatloaf. I said if it ends in loaf I am not eating it. If you post the recipe I will look at it and see how it might be different from the selections I have had before and maybe your great recipe can finally change my mind :)

I think my hubby could eat meatloaf every week, I on the other hand like it only now and then. Some of these recipes though have me thinking about making it again soon. Hope they help or inspire!

Hi, i posted a comment to AmberWave about meat loaf, but instead of re-wrighting, i'll post the recipe and make notes of what I sometime change.

Ingredients

 

  • 1 large onion, chopped  *
  • 1 1/4 cups plain dry bread crumbs  # @
  • 1 small green bell pepper, chopped
  • 3/4 cup dry NESTLÉ® CARNATION® Instant Nonfat Dry Milk
  • 2/3 cup water   @
  • 1/2 cup ketchup, divided
  • 2 large eggs, lightly beaten
  • 1 tablespoon dried parsley # @
  • 1 tablespoon garlic salt # @
  • 1 teaspoon ground black pepper
  • 3 pounds ground beef

 

Directions

PREHEAT oven to 375° F.

COMBINE onion, bread crumbs, bell pepper, dry milk, water, 2 tablespoons ketchup, eggs, parsley, garlic salt and black pepper in large bowl. Add ground beef; mix lightly but thoroughly. Divide meat mixture in half and shape into two loaves. Place in ungreased 13 x 9-inch baking dish. Flatten loaves on top. Cover with remaining ketchup.

BAKE for 55 to 60 minutes or until no longer pink in center. Let stand for 10 to 15 minutes before serving.                           

  * I only use a small to med. onion, chopped fine.  # I add italian seasoned bread crumbs and italian seasoning. @ leave out parsley & garlic and add a package of beef or brown gravy mix and beef broth for the water.  The powdered milk keeps it moist and if you make it the morning or night before and let it sit in the frig. it has a better taste. If you try it lets us know what you thought.
