On my "It's A Wrap", My ways for using leftover or making quick easy meals.
I always keep flour taco shells on hand in the freezer for making these.
At Thanksgiving I took leftovers and put some turkey, gravy, sweet spud, stuffing, veggies, cranberry sauce into the center of the shells. (They come in different sizes.) Fold up like a burito and brown in a little bit of oil. Serve hot or take along for a lunch or snack.
I also do this with leftover meatloaf, chicken, stews, pork, taco filling, manwich...I add cheese to many of them to make a yummy gooey meal. I also found that wraping foods is a great way to get kids to eat veggies. (You can hide them.) LOL
We also make little pizza pockets using spaghetti sauce, pepperoni (I like the Turkey one, black olives, pineapple, cheese. Again fold like a burito and heat in a oiled pan to melt cheese and brown the outside.
Another favorite filling is ground meat, diced potatoes, shredded carrots, green onions cooked in some of the marinade mentioned in first part of my post. When I am short on time and can't wrap in egg roll wraps, I use taco shells. Plan on more than you think you will need. I use ground turkey, but beef works as does buffalo. You can also make them without meat, I also love rutabaga in them YUM!!!
Scallop Potato/Ham/Veggie pot
In your crock pot use enough boxes of Betty Crocker potatoes (Augraten or Scallop) for your crew add cubbed ham or chicken breast to the top. Cook on low for 6-8 hours. Serve with peas/carrots (could even add it to the potato/meat mix and make a one pot dish. Serve with crusty bread chunks soften/warmed in microwave with damp paper towel over it.
