Make Ahead & Time Tips

Planning ahead or short on time for your next meal? Ask the community for quick kitchen tips and last minute entertaining touches.

Favorite 15 Minute (or less) Meal

There are nights where I am too tired or busy to think about cooking. I thought we could share our favorite quick meals… for inspiration (when we need it!).

Here are two recipes I often make when I am in a hurry or busy:

Egg Noodle Tuna Casserole
What you need:
2 cans of cream of mushroom (reduced sodium preferred).
½ bag of frozen peas
2 cans of tuna (in water and drained. * I love the Trader Joe’s Tuna- red label.)
½ of bag of egg noodles (I like the medium sized egg noodle)

How you make it:
Cook noodles, per package. Drain. Add tuna, peas and cream of mushroom. Add a little pepper (or red pepper if you want to add a kick). Cook for only another minute or so- until peas are cooked. (Keep your eye on the pot and stir until you get the texture the way you want it!)

Mmm… Maybe I’ll try the Tuna Noodle Casserole to spice up this quick classic.

Mexican Dip:
What you need:
Can of Black Beans (or Pinto) drained and washed.
Shredded Cheese (your favorite)
Can of sliced olives, drained.
A little salsa
Your tortilla chips.
And only you if you have it:
Diced avocado, cilantro, sour cream (or plain yogurt). Add last for garnish

How you make it:

Eyeball the ingredients (You know how much cheese you like!) Add some of the beans in the dish with a little cheese, olives, salsa, and micro for 1 minute- stirring after 30 seconds. Add garnishes if needed/wanted. When warmed, add chips to bowls and enjoy.

It’s not the most beautiful looking dish, but my does taste amazing. And it’s filling!

I just looked at the Mexican Grilled Cheese Sandwiches and my mouth watered! Hmmm… I think I might try that next time for a quick meal.

These both sound very good. I am especially glad to see the nice alternative to the typical tuna casserole. Yours sounds delicious and easy...great combo! I'll look forward to trying it. Thanks again.

Our favorite shortcut meal. 15 minutes tops!


Boxed Mac & Cheese with Broccoli and Ham


·     2 boxes macaroni & cheese


·     1/2 cup butter + 2 tablespoons (for preparing mac & cheese)


·     1/2 cup milk + a couple tablespoons (for preparing mac & cheese)


·     2 - 3 broccoli crowns


·     ¼ cup red onion, sliced small


·     Single ham steak


·     1 cup shredded cheddar


·     ¼ cup shredded parmesan


·     ½ teaspoon season salt (Bon Appetit, or Beau Monde, or something with a celery note – even celery salt)


·     black pepper


Bring a large pot of salted water to boil. Cook macaroni as directed. While macaroni is cooking, sear ham steak just to get it warmed and nice and browned (if desired, throw a teaspoon of butter into a frying pan). Dice up ham.


Wash broccoli, shake off most of the water and cut up broccoli crowns into large bite size pieces. Put into large (gallon) zip baggie, cut a couple slits into top of bag for steam to escape and lay flat in microwave. Cook on high for 3 minutes.  While broccoli is cooking, slice red onions.


When macaroni is done, prepare mac & cheese as directed on box adding the extra milk and butter, mac & cheese should be runny. Throw in the red onion, shredded cheeses and toss around to melt, add the ham and broccoli.  Season with season salt and black pepper. Toss around to combine. Thin with milk if necessary.


If desired, crush up herb croutons and mix with melted butter, sprinkle over mac & cheese and place under broiler for a couple minutes to crisp.

Hi, Mine is breakfast foods, like pancakes, eggs & meat or just eggs & meat. I also like grilled cheese snadwiches & tomato soup. Granna2
