I love corn bread. When not always having the time to make from scratch, I would use the mixes. But the taste is not as good. I found the solution by mixing and freezing the dry ingredients in a baggie, making several up at once, and labelling them. Then taking out, adding the milk, egg, and oil as needed. So quick and easy, saves money, and tastes better. Here is the recipe that I use. Hugs, ldbayou
CORN BREAD
1 C corn meal
1/3 C flour
2 tsp. baking powder
1/2 tsp. salt
1 tsp. sugar (optional)
2/3 C milk
1 egg, beaten
3 Tbl. oil or shortening (I use oil, quicker)
Preheat oven to 450 degrees. Oil 8 inch round cake pan, or iron skillet. Combine the dry ingredients. Add milk and egg, stir. Add oil or shortening and mix. Pour into pan. (I heat the oil in my skillet till HOT, sprinkle plain corn meal lightly over the bottom of the skillet. Pour batter in, then bake. This prevents the bread from sticking.) Bake for 20-25 minutes or golden brown.

Great Idea!!! I love it. I do the same type of thing with my pancake recipe; but never thought of of it for corn bread.
I think I'll make some this weekend, and package some up while I'm at it.
