Freezing Lasagna

Does anyone have any advice for preparing Lasagna and freezing for later use (what are the best pans to do this in? how do you cover- with foil? do you use a pre-cook the noodles recipe or can you use the recipes where you don't pre-cook, etc?)

go ahead and fix lasagna as you normally would.let it cool completely,cut in single serve squares and place them in freezer bags. i stick them in the freezer door till they get solid. if you use no cook noodles,remember to use more liquid in your sauce. i use tomato juice( one cup) for a jar of sauce.

hi abjean, I fix mine in a glass baking dish then freeze, that way it goes from the feeezer to the oven, I cover it with foil, spray or coat the foil this oil so it won't stick to the cheese when it bakes, I cook the noodles. I have frozen baked and unbaked, both the same way. Granna2

I have a large crockery pan made for lasagne and use 9 cooked noodles. If there are left overs I remove, with a broad pan cake turner and wrap in heavy clear plastic wrap before I wrap it in heavy duty foil. The acid of the tomato reacts with aluminum foil over a longer period of storage time and I don' t feel comfortable with that. Before I reheat in the oven, I remove the plastic wrap, put it into a pan that won't crack when the hot oven meets with with frozen lasagne. Cover with the foil (shiny side down) and reheat in a slow oven or reheat in the microwave. I have not found any adverse effects that freezing has on the ricotta, other cheeses or the noodles.
