Welcome to the Message Boards!

Is this it?

1/2 c. Bisquick
4 eggs
1/2 lb. bacon, cooked & chopped
Dash of salt
Pinch of cayenne pepper
2 c. milk
1 sm. onion, sauteed
2 c. Swiss cheese, grated
Parsley flakes (a little)

Grease a 10 inch pan or 3 small muffin tins. Preheat oven to 350°F.

Mix Bisquick, milk, eggs, onion and seasonings in blender. Pour into bowl and fold in bacon and cheese. You can also use 1/2 pound of ham, or seafood, sauteed with the onion instead of bacon.

Bake at 350°F for 45 minutes or until a thin knife inserted in center comes out clean.

When I first made this Quiche, I couldn't believe something so good could be so easy. When I make it the regular way, people leave the crust that I have worked so hard to make. But with this one, they eat every morsel.

I love those Bisquick quiches.  I have a couple of little booklets that they published in the 1980's . . . with some quiche recipes (they called the pies) like seafood pie, ratatouille pie, open-face pizza

pie, broccoli beef squares, cheeseburger pie, layered spinach supreme.  Also some desserts:

cream cheese shortcake squares, luscious fruit fluff, and strawberry dessert.  My favorite is a

quiche made with cheese, broccoli, eggs, Bisquick . . . . I have misplaced the recipe.  Drat!  I'll

be happy to share.  Write to me:  Coqui_sk at yahoo.com

Impossible Ham 'n Swiss Pie

2 cups cut-up fully cooked smoked ham
1 cup shredded Swiss cheese (4 oz)
1/3 cup chopped green onions or chopped onion
2 cups milk
4 eggs
1 cup Bisquick baking mix
1/4 tsp salt
1/8 tsp pepper

Heat oven to 400 degrees. Grease pie plate, 10 x 1 1/2 inches. Sprinkle ham, cheese and onions in plate. Beat remaining ingredients until smooth, 15 seconds in blender on high or 1 minute with mixer.  Pour into plate. Bake until knife inserted in center comes out clean, 35 to 40 minutes. Cool 5 minutes. 6 servings.

You can vary this recipe to suit your tastes. It is great with cooked bacon, cooked sausage, steamed broccoli, mushrooms, artichokes, bell pepper - whatever you like. I also like swiss, gruyere and mozzarella cheese or a combination. Just depends on what I have on hand.

Quiche

2 cups milk
4 eggs
3/4 cup biscuit baking mix (Bisquick)
1/4 cup butter, softened
1/3 cup onions, finely chopped
1 cup grated Parmesan cheese
1 (10 ounce) package chopped frozen spinach, thawed and drained
1 cup cubed cooked ham
8 ounces shredded Cheddar cheese

Beat together milk, eggs, baking mix, butter, onions and Parmesan cheese. Stir in spinach, ham and Cheddar cheese. Pour into lightly sprayed/greased 10 inch quiche dish and bake at 375 degrees for 50 minutes, until eggs are set and top is golden brown.
