How to cut ginger root

How do you cut up ginger root my wife is putting it into her white chicken chili recipe and needs advice.

I've used fresh ginger often in recipes.  The way I cut it up is to first cut off a piece that looks as though it will equal the amount needed.  Then, using a vegetable peeler, peel off the outer bark.  Hold it secure and slice into 1/4" slices.  At this point you can either mince it, julianne it or chop it, according to what you need.  Be sure your knife is very sharp to slice the ginger because it is a bit woody.  Be careful of those fingers, please!!

I've always enjoyed the honest taste of food without the costumes of sauces, gravies and coatings.

I use a teaspoon to scratch the skin off ginger and a mandolin or grater to “cut” the ginger.  Any leftover ginger goes into the freezer to be used the same as fresh in cooking.  Don’t thaw it before you cut or grate it up though.  The flavor is a little different (but not intolerably different) but the texture is much different so it will only be suitable for cooking after.
