You are going to receive either a lot of answers most different or none!  LOL

A pork shoulder roast (more properly called a pork butt and no I don't know why) can be smoked for a lot of different times.  Personally, I prefer the pork to be "falling off the bone" tender with all of the connective tissue going to flavor.  For a rather large "butt" I have smoked one for roughly 14 hours.  This assumes that you are indeed SMOKING the butt and not BBQing with some smoke added.  This shopuld give you a "smoke ring" on the meat of between a 1/16" and 1/4".

About the Sauce and Rub.  Sorry.. I use my recipie in competition and woun't give t out!  :)  By the way, I don't know what part of the country you  are from, but the sauce and the rub is extremely regional.  The rub in Kansas City will be totally dofferent from the one in SC for instance.  You might try Foodnetwork.com and click on Bobby flay for his answer to this.Yes

Good luck with your efforts.

dolphi8042:

How big is your pork shoulder roast?

http://www.bettycrocker.com/how-to/charts-and-guides/Cooking-Charts/grilling-timetable.htm

If it was three pounds, turn your grill on and grill indirectly four 2- 2.5 hours.  meat thermometer should read 160ºF

as for smoking our pork- how big is your can?

Hope this helps... CC
