cornish game hens

hpw long do u keep a cornish game hen in a turkey fryer and how many can you cook at one time

Don't crowd the pot.  The hens should have plenty of room in the oil and should not touch each other while frying, so only one or maybe two at the same time, depending on the size of the pot and the hens. 


At 350 degrees, it should only take 10 to 15 minutes to cook one.  The general rule is 9 minutes per lb - and an average weight is 1 1/2 lbs.  The best way to determine doneness is to check the thigh meat with a meat thermometer - at least 170 degrees. 


It also helps to have the hens at room temp when you fry them.  A cold hen will lower the temp of the oil a lot.


If you have several to fry, put the cooked hens on a wire rack on a pan to drain - and put the pan in the oven set to 200 degrees to keep them warm until all of them are through frying.
