The Best Hamburger

A big hello to all grillers:

My sister-in-law who lives around Lake Norman, NC has always made great burgers.  Recently she found a new spice on the internet called Babunya's Gourmet Spice.  She added that spice to her burgers and it has made it even better.  The following is how she makes her burgers in her words.

"I have prepared hamburgers using Babunyas original spice. My family agrees, it was the best hamburger they have ever had.

Recipe:

1 lb. 85/15 ground hamburger
1 egg
1/4 c. oats
1 tsp. chopped garlic
3 T. grated parmesian cheese
1/4 c. ketchup

Combine ingredients. Make patties. Heat grill or skillet. Sprinkle Babunyas spice on both sides of patty. Cook until your desired doneness. Serve on buttered grilled sour dough bread. Yum! Thanks to Babunyas Gourmet Spice."

I followed the directions to the "T" after obtaining my bottles of the spice and I have to agree, Thanks to Babunyas Gourmet Spice.  To make it easier for everyone, go to www.babunyas.com.

There are great recipes for tomato soup and grilled cheese sandwiches which happens to be one of my favorite "quick" meals.  The nice thing about this website is it gives other peoples recipes and also the guy and his mom doing live video meals.

It was nice speaking to everyone.

Thanks Carl!  We grill year-round and I'm always looking for new ideas.  It's hard to beat homemade burgers!

Hi AlabamaCooker:

If you haven't checked out the website you should.  They have some great video recipes; one is a boneless skinless chicken thigh with the Babunya's Spice.  The spice is a local spice but is gaining attention from what I can tell.  Even though I am in PA, I know that people from other states are using it too.  I like the idea of having a video recipe to watch to get the idea of how to make the dish.  On the chicken video, the smell of grilling with the Babunya's Gourmet Spice actually drew whitetails to the guys backyard.

I've also tried the eggs, bacon and vidalia onion dish he has on the video.  Anyone who is sleeping while you are cooking will wake up quick.

I am glad I could introduce you to Babunya's Gourmet Spice.

Hi AlabamaCooker & PACARL:

Oh My God!  What a recipe from the sister-in-law.  This could be the perfect burger or a great alternative to your own favorite recipe.  I liked how the burger stayed together while cooking, but the seasoning, when put into the hamburger blend BEFORE cooking really enhanced the flavor.  The first time I made it, I put Babunya's Gourmet Spice on the burger while grilling, but really, the AWESOMENESS comes out when you put the spice in the hamburger blend prior to grilling.

All I can say is the whole neighborhood smelled differently and some neighbors were actually asking what the uniques smell was.  I told them I had a secret ingredient, but they saw the spice on the patio table.

Mississippi-Pipi says well done Babunya's Gourmet Spice.

Here's a recipe that I always use for grilled hamburgers. It's a combination of America's Test Kitchen Well Done Hamburgers recipe and Weber's Hamburger recipe from Chef Jamie Provence. The burgers have really good flavor and are very juicy.

Well-Done Grilled Hamburgers

Ground beef that has a panade (a paste made from milk and bread) added to it, creates juicy burgers even when they are cooked to well done.

Serves 4

1 slice of white sandwich bread. Remove and discard crust, dice bread into 1/4-inch pieces (about 1/2 cup of bread cubes)
2 Tbs whole milk

1 Tbs ketchup
1 tsp basil
1/2 tsp thyme
3/4 tsp table salt
3/4 tsp ground black pepper
1/2 tsp worcestershire sauce
1/2 tsp Tabasco red pepper sauce
1 tsp granulated garlic
2 tsp A1 steak sauce

1-1/2 pounds of 80 percent lean ground chuck
4 hamburger buns

Using a fork, mash milk and bread in a large bowl until fully mixed. Mixture should equal about 1/4 cup. Mix the remaining spices into the bread/milk mixture. Mix well.

Crumble raw ground beef into small pieces and add to bread/milk/spice mixture. Lightly mix, with your hands, until meat/milk/bread mixture is uniformly mixed and will hold together when forming a patty. Divide meat mixture into four equal pieces and form pattys.

Grill until internal temperature of each patty is 170F.
Don't press down on burgers while they are cooking.

Those who forget the pasta are condemned to reheat it.

It may sound like meatloaf, but I got to tell you it TASTES AMAZING!!!!  I've been hearing a lot about this Babunya's Spice and couldn't find it locally, but I found their website www.babunyas.com and their "Original Family Recipe" IS OUT OF THIS WORLD, and the best part NO MSG, and it's all natural.  I did The Best Hamburger recipe and loved it.  The Babunya's Spice is GREAT on EVERYTHING!!!  I'm addicted.  I've used it on Boneless Skinless Chicken Thigh on the grill and it was fabulous.

Thanks for the recipe and introducing me to Babunya's Gourmet Spice.

My bacon cheddar cheesebuger is pretty good.

1/3 cup mayonnaise

1/4 tsp salt

1/4 tsp pepper

1/8 tsp cayenne pepper

6 oz extra sharp white cheddar cheese grated

1/4 cup baby bella mushrooms finely chopped

1/4 cup onion finely chopped

1 garlic clove chopped

1/3 cup piquillo pepper finely diced

4 1/4 pound hamburger pattys

8 thick slices of crisp bacon

In a skillet cook onion, mushrooms and garlic until tender. Add to the cheese in a bowl.

Add all other ingredients (except the hamburgers and bacon of course), and mix thoroughly. cover the bowl and put in fridge.

Put burgers on grill over medium to high heat, and cook 3-4 miutes each side. During the last minute or so top each burger with the cheese mixture. Cook until cheese melts. Place burgers on a bun, top with 2 slices of bacon.

It sound like a lot of trouble, but it's worth it.Big Smile

I used some Babunyas the last time I grilled. A friend was raving about it and I made him bring me enough to make some burgers. I grilled one morning when I got off of work at 7am and had 3 neighbors ask what was smelling so good while they were on their way to work. Let me give you my receipe:

1 lb Ground Chuck (85-15)

1/4 lb Ham

2oz Pickapeppa Steak Sauce                                                                                                    1 Small Onion finely chopped

1 Fresh Jalepeno finely chopped

1 Slice Whole Wheat Bread

1/4 to 1/2  Cup Milk

1 egg

1tsp Jalepeno Tobasco

Babunyas to taste

Finely dice ham or put in a food processor.

In a medium bowl mix crustless bread in Milk, Pickapeppa, & Tobasco add Egg and Babunyas  when it is mixxed well  then slowly add ham, onion, & jalapeno to mixture. Pour into hamburger gently mix it till all the mixture is absorbed. Pat into patties it usually makes 3 or 4 DO NOT MASH burgers believe me you want the juices.

Let me give you a hint on doing the patties, lay out the Meat to the thickness desired and I use a straight edged small glass bowl and use it to cut my patties it is a little bit bigger than the bun  just keep putting the meat back together. I usually cook them in my smoker and I put the onion skins in with my mesquite chips and put just a touch of Babunyas on them right before I put them on the coals put the patties right next to the fire box and turn them after about 10 mins then check after 30 mins to desired doness. I usually use Grilled Onion Rolls for buns, pepper cheese and Great Value Spicy Southwester Mustard from Wally World, and lettuce
