I love pasta salad with lots of veggies as a side dish for my BBQ's.

hi, We always have potato salad, but that's year round. I live fruit salad made with a lot of fresh fruit.

My favorite is a toss up between fruit salad and coleslaw.  Come spring I crave the fresh seasonal produce!

Veggie layered salad

Potato Salad:

 

Boil potato cubes to desired tenderness. 

Hard boil eggs.

Allow to cool to room temperature.

Toss together potatoes,minced hard boiled eggs, mayonaise, sliced green olives, onions if desired.

Top with hard boiled egg slices.

Sprinkle with paprika.

Refridgerate.

 Enjoy

I love roasted veggies on the grill on a layer of crisp lettuce (and tomatoes of course) !

With middle age seems to come my middle and constant hunger.

A favorite salad that we enjoy with a BBQ meal is a "Fried Okra Salad".  When you first tell your guest what it is, they do a lot of whispering.  When they taste it, everyone loves it.  They go back for seconds!!!

A favorite salad that I like to prepare for a BBQ meal is a "Fried Okra Salad".  When guest first hear the name, they are not to sure of it.  After they taste it, they go back for seconds!

Small amount

1 large tomato-chopped

1/2 bell pepper-chopped

1/4 onion-chopped

In small bowl blend-1/4 cup vegetable oil, 2 tablespoons sugar, 1 tbsp. vinager.  Pour over chopped vegetables

Fry about 6-8 slices of bacon-cool chop

Fry 2 lbs. Okra- drain on papertowel and salt while hot

Pour okra, bacon and chopped vegetables with dressing in  bowl. Toss together...Enjoy!

[My favorite summer salad is called "Summer Salad" lol, I have been making it for years, it's still on the worn piece of paper I originally wrote it on. 

4 cups of spiral noodles cooked and cooled    1/2 cup of ketchup

1/2 cucumber                                                    1/2 cup vinegar

1 green pepper                                                 1/2 cup sugar

2 stalks celery                                                    1/2 cup oil  (Blend together in a blender & pour over ing.)

2 tomatoes     (Dice all )

I love potato salad, especially when it's made with my german grandmother's favorite recipe. She would boil a large pot full of small potatoes (about 5 or 6 lbs.)  with the skins on, then poke them with a fork periodically to check for softness. At the same time she would boil about a dozen of eggs in another large pot. When they were done she would put them in a strainer and run some cold water over them before letting us kids pull the skins off the potatoes and peel the eggs. Then we would cut the potatoes into thick slices and quarter the eggs. While us kids worked on that, "Oma" would dice 2 onions and about 4 large pickles and crisply fry a pound of thick-cut bacon and crumble it. Then everything got mixed in this huge stainless steel bowl with about half a jar of mayonaise type dressing and a bit of spicey brown mustard.

I make it several times each summer, it's great for BBQs and leftovers (if there are any, and often there aren't) are quick lunches the next day.

Coleslaw made with white cabbage and some purple cabbage, red radishes, green onions and shredded carrots is another summertime favorite of mine.

jersey tomato, sliced in a bowl.

sliced onion, fresh basil, a little salt to taste, xtra-virgin olive oil to cover.

serve with crusty itailian bread.
