zucchini- whats simple, easy, use lots of zucchini

my dad's zucchini has gone banannas (so to speak) and he is getting "fruit" as big as watermellons and hates to see it go to waste.


i'm looking for some incredibly basic and easy recipies to use a ton of zucchini!!!!!


breads, bars, cakes, cookies, main dishes, pies, jellies  -HELP!


even sotrage -dehydrating? -freezing suggestions (apparently shredding b4 is the only way to go)

I love to use zucchini in stir-fry meals, too.



Deep Fried Veggies




Batter:
1/2 cup milk
1/2 cup flour
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder

Coating:
1/2 cup flour
1/2 cup corn meal
1/2 tsp salt


Heat deep fryer to 375 degrees. Combine batter ingredients. In separate bowl, combine coating ingredients. Dip sliced veggies in batter then into coating mixture. Let veggies sit for about 5 minutes, then fry for about 5 minutes until crisp.


*Don't overcrowd fryer, and make sure the oil is hot enough to cook zucchini quickly so it won't get mushy.




This is great, too.
Baked Zucchini


1/2 cup seasoned dry bread crumbs
1/2 tsp salt
1/2 tsp pepper
2 tbs grated Parmesan cheese
2 egg whites
Thinly sliced zucchini

Combine bread crumbs, pepper and cheese. In separate bowl, lightly mix egg whites. Dip zucchini slices into egg whites, then coat in bread crumb mixture. Place on sprayed or greased baking sheet. Bake at 475 degrees for 5 to 6 minutes, turn and bake 5 to 6 minutes until brown and crisp.

Got this recipe from an old church cookbook:  Chocolate Zucchini Cake


Beat 4 eggs and 3/4 c. salad oil 2 minutes.  Add 2 c. sugar, 2 c. flour, 2 tsp baking soda, 1 tsp. cinnamon, 4 T. cocoa powder all at once.  Mix well (by hand, please!!)  Stir in 1 tsp. vanilla, 3 c. grated zucchini, and 1/2 c. pecans.  Pour into 9 x 13 greased pan.  Bake at 350 for 45 minutes. 


Mix 3 oz. cream cheese, 1/2 c. softened butter, 2 1/2 c. sifted powdered sugar, 2 T. cocoa, and 1 t. vanilla.  Spread on cooled cake.

Hi,dschimpf, I love zucchini. I have been trying to find a recipe to make pineapple from zucchini, i remember that it called for a lot of shreded zucchini, crushed pineapple, pineapple juice + other things, I was told it tasted just like pineapple.  I like to make what I call zucchini boats. You start with a large zucchini, cut it long ways, remove the seeds,put it on a cookie sheet, cut side down, with a little water and bake about 30 moin. or uhtill it's almost done. While it's baking crumble 1 lb. hambuger/ground beef into a skellet and cook untill done, drain grease then add enough spagetti sauce to make it saucey. Then turn zucchini over and fill with the hambuger mixture and bake about 20 min. more, untill the zucchini is tender, then top with shreded mazzerila cheese and return to oven to melt. We love this. I also like to cut up a small zucchini , add stewed tomatoes and simmer untill the zucchini is done, then add a little mazzarela cheese chunks and seasoned bread cubes. I also put it in salt water like cucumbers. then theres breaded and deep fried or lust fried like green tomatoes, O' what great ways to use it. I was just at another web site that had some great recipes. I'll post that tomorrow. Good Luck, Granna2

  • here is the recipe for "zucchini pineapple" I haven't made or tried it, just heard about it and that it is really good. I am going to make it. I ask for and got it from the Kraft web site.  Zucchini pineapple:1 gallon peeled and seeded cubed or grated zucchini, 3 cups sugar, 1 & 1/2 cups real lemon juice, 3 cups unsweetened pineapple juice.  mix ingredients, simmer 20 minutes. Pour into jars and seal. Boil jars in a hot water bath for 15 minutes. This can be used just like pineapple.                                                                                                                                                                  * Zucchini Jelly: 6 cups shredded zucchini, 6 cups white sugar, 1 (5.25 ounce) can crushed pineapple, 1/2 cup lemon juice, 1 (6oz.) package strawberry flavored gelatin mix.  1. combine zucchini,sugar,pineapple,and lemon juice in a large pan over medium heat . boil mixture untill the zucchini is clear, remove from heat. add gelatin mix and stir untill completely dissolved.  2. ladel into hot sterilized jars to within 1/4 inch of the top. seal and process in a boiling water canner for 5 minutes.

I put chunks of zucchini in everything from meat loaf to spegetti, even sloppy joes. We had a zuccini overload last year.

You can also use zucchini in place of cucumbers when making relish, i have eaten it and couldn't tell any difference in the taste, it did seem to be a little softer.granna2
