Looking for a recipe...

Hey everyone! I'm new to the site, and I need a little help.


About ten years ago, I came across a recipe in one of those fundraiser cookbooks (like they sell for church and library fundraisers). The dish was titled "Mashed Potato Souffle". I made it for the boyfriend I had at the time, and we both LOVED it. The problem is, I have moved several times since then, and cannot find the cookbook.


I only made it twice, and ten years is a long time to remember (for me anyway). I DO remember the main ingredients, but have searched online for almost two days now and haven't found anything close.


The main ingredients were:



  • White potatos

  • Eggs (or maybe egg whites?)

  • Milk or cream

  • garlic

  • salt

  • pepper

  • Parmesan cheese

  • Butter

  • Bread crumbs


From what I remember, the recipe instructs to boil and mash the potatoes, add the eggs, milk, seasonings. Then the mixture is layered in cassorole dish, the layers separated by the parmesan cheese (the second time I made it I used shredded cheddar between layers...YUMMY!). Then it's topped with the bread crumbs and baked for an hour (I think).


If this sounds familiar to anyone, if you have a similar recipe, or you can tell me how to guesstimate the amounts of the ingredients so I can try to make it again, PLEASE LET ME KNOW!!

I usually warm leftover mashed potatoes and add more butter and cream since they thicken in the fridge overnight. But without leftovers, I would use 4 to 6 medium-large potatoes, boiled whole then peeled and mashed, 3 to 4 tbsp butter and 3/4 to 1 cup milk or cream...enough to make them smooth and creamy.


Depending on how much garlic you like, mince 1 to 3 cloves of garlic and lightly saute (do not brown...just soften) in a little butter, or add a little garlic powder. Add salt, but remember most cheese has a lot of salt in it. I have never layered the cheese...I just stir it in the potatoes. Taste the mixture and adjust seasonings before adding the eggs. Separate 3 or 4 eggs. Stir in the yolks. Beat the whites until stiff. Stir about 1/4 of the whites into potatoes to lighten them, then gently fold the rest of the whites in. Gently spoon into a buttered casserole dish. I sprinkle paprika on top, but breadcrumbs sound great. Bake at 350 for about an hour.


Just be careful not to stir the potatoes too much or too vigorously while mashing and adding all the ingredients. They have a lot of starch and overworking them will make them gummy. And don't let the kids/grandkids/hubby run through the kitchen or slam any doors while baking or it will fall. LOL


If you Google potato souffle instead of mashed potato souffle, I think you'll find a lot more recipes that you can get ideas from...just weed through all the sweet potato souffles. Good Luck!

Ingredients:
6 cups mashed potatoes
3/4 cup milk
1 tablespoon dijon mustard
3/4 cup shredded sharp cheddar cheese
1/2 cup shredded Swiss cheese
1/4 cup Parmesan cheese
3 large scallions -- sliced
1/4 cup chopped onions
1 teaspoon salt
1/2 teaspoon freshly ground pepper
3 large eggs -- separated
 


 


Directions:



Preheat oven to 375F degrees. Add milk to the prepared potatoes, mustard, cheese, scallions, onions, salt, pepper and egg yolks. Mix together thoroughly until well blended.

In a small bowl with mixer on high speed, whip the egg whites until stiff peaks form. Gently fold beaten egg whites into mashed potato mixture. Spoon the mixture into a greased 2 quart soufflé dish. Bake about 50 minutes, or until the soufflé is puffed and golden.
