Baking dairy-free and egg-free?

Hello All.


I am new to this site.  I am looking for suggestions.  I purchased the new Gluten-free mixes from Betty Crocker for brownies, chocolate chip cookies, and yellow cake mix.  I have made all three of these.  The cookies were okay.  The other two didn't quite work out too well.  I tried to use the dairy and egg subsititues that I use in all my cooking, but I was not satisfied with the end result.  Does anyone have any suggestions on good substitutes for dairy (other than rice milk, hemp milk, soy milk / and Earth Balance butter)  or eggs (EnerG egg substitute)?   Maybe I am just not using the best substitutes....

I know that this is an old post, but thought you might try again! I made the chocolate chip cookies with earth balance buttery sticks and substituted each egg with 3 tablespoons unsweetened applesauce and 1 tsp baking powder. That won't work for the cake (I made the devil's food), so buy some Ener-G egg replacer and follow the directions carefully. The cake is the best texture on a gluten-free cake that I have ever baked without using egg or dairy.

Saw your posting as I was searching high and low for new recipes. My 6 year old has just been diagnosed with celiac disease and is highly allergic to soy, peanut, and walnut. I just purchased a cook book by Betheeny Frankel that makes things so much easier in the kitchen and gives so many variations to her recipes. She says to try almond milk, coconut milk,


to sub the butter she says to use shortening because it doesn't have the saturated fat content or the trans fat content that butter does.(Go figure!)


Eggs-if the recipe calls for 4 eggs then try 2 eggs and 2 egg whites.(2 egg whites equal 1 egg)


Like I said I just got the book today and have read the entire book tonight after I got all of the kids in bed. I am desperate to get my child well and feeling better. If you have any wonderful recipes or websites please send them my way.
