To: KC GREGORY-recipe wanted

Hi KC, I read your intro a few weeks back and responded, but you may not have read it.  Hope you see this.


You mentioned a chicken spaghetti recipe.  I have one that I love (made with Rotel tomatoes), but since I love chicken I would like your version also. And anyone else who has a great chicken recipe, please share.


One other request.  There is a wonderful convenience store/gas station in our state called BucEE's and they have a fast food item called a "Crispito".  It's made with chicken, cheese, green chilis, & wrapped in a tortilla and fried. Fabulous! If anyone has the recipe, or something similar, please post.

We love these. It would be easy to fill them with shredded cooked chicken and whatever you like instead of beef. Sliced American cheese or Velveeta is creamier than cheddar so I use them sometimes. Sometimes I add refried beans, green chilies, diced tomatoes...just whatever I have on hand.  You can omit the cream cheese...and also use the sour cream and/or salsa for a side.  I fry mine instead of baking them.


Crispy Tortillas


1 lb ground beef
8 oz cream cheese, softened 
1 cup sour cream
1 cup salsa
1 pkg taco seasoning
1 bunch green onions, chopped
2 cups shredded cheese
10 flour tortillas
1/2 stick butter, melted



 



Brown ground beef. Drain grease then stir in cream cheese, sour cream, salsa, seasoning, onions and cheese. Spread mixture on tortillas and roll up, burrito style. Brush with butter and fry in skillet or bake in oven until crisp.

Hi Alabama!!  Glad to hear from you.  I knew you would have a good recipe.  I normally love to experiment in the kitchen, but have not tried to duplicate BucEE's Crispitos.  So will take your recipe, adapt it and try to fix them later. week.  I will let you know how they turn out.  The heat has been a scorcher the last three weeks.  Breaking records everyday.  So not doing much cooking lately.  Mainly salads, and cold stuff.  As soon as I fix these, promise to holler at ya.  Thanks Again!!! ldbayou
