You can cook your own chicken for this recipe. You can cook a whole chicken, or use chicken pieces, bone-in or boneless, whichever you prefer. You can bake it in the oven, boil it, cook it in a skillet or grill it.
To roast a whole chicken in the oven, wash and pat dry. Lightly coat all over with softened butter, oil or brush lightly with mayonaise. Season with salt and pepper. Place in a roasting pan or shallow baking dish. Bake at 325 degrees for about 1 1/2 hours until juices run clear and the meat next to the inside bones is white and not pink.
For chicken pieces, season and place in sprayed baking dish and bake at 325 degrees for 1 to 1 1/2 hours until done. Boneless pieces will cook much faster than bone-in pieces.
For boneless breasts, season and cook in a skillet with a little oil. Cook several minutes on each side until no longer pink in center.
You can also boil chicken until done and no longer pink on the inside, especially next to the bone.
When chicken cools, take meat off bone and shred.
